    Binbiya is a restaurant located on the Awa Highway (National Route 11) in Kitanada Town, Naruto City, Tokushima Prefecture, situated in a beautiful location facing the Seto Inland Sea. In the Tokushima dialect, “binbi” means fish. Using freshly caught local fish every day, Binbiya offers a variety of food on the menu such as sashimi, tempura, boiled fish, kamameshi (rice, meat and vegetables served in a small pot), and curry, etc. The restaurant’s omakase (today’s special) set meal is a popular meal of sashimi, tempura, and another food of the day, served with a bowl of rice and miso soup with seaweed from the Seto Inland Sea. People can often be found queuing to get into this popular restaurant.

    We managed to get a table here for a lunchtime spot and had a great meal - must try the wakame - all of the fish dishes we had were excellent.

    This restaurant in Nishidaiku Town, Tokushima city, Tokushima Prefecture specializes in Tokushima ramen, and fans visit from all around the country. There’s often a line outside, and signatures from celebrities adorn the interior. The pork bone and soy sauce soup is flavored with dried fish and other seafood along with vegetables. It’s topped with a raw egg and contains salty-sweet pork back ribs and chewy homemade noodles, which the rich soup complements well. It goes very well with rice, too. Only counter seating is available, but the interior is spacious, so there’s no problem with entering alone.

    "This Tokushima ramen shop founded in 1998 is located in Aizumi Town. The name is an homage to legendary baseball player Sadaharu Oh, whose Chinese name is Wang Chen-chih. The popular shop, aiming to become a ramen shop loved by people around the world like Mr. Oh, has a motto of ""make ramen that even children will enjoy,"" is visited by people of all ages from even outside of the prefecture. Their soup, which has been developed through continuous trail and effort, has a mild yet rich flavor. It meshes well with their homemade medium-thin straight noodles. Their standard ""shinasoba"" ramen is topped with pork belly, bean sprouts, seasoned bamboo shoots, and green onions. We recommend getting their ""shinasoba nikutamairi ramen, which is topped with extra pork belly and a raw egg."

    This restaurant is located in Muya Town, Naruto City, Tokushima Prefecture. Enjoy your meal at table seating or in a tatami room with a harmonious and soft atmosphere. In-season fish from the Naruto seas are the main ingredients. You can watch lively fish swim in the shop tank too. Recommended dishes include the “special selection sashimi teishoku” with a variety of fresh sashimi and the crispy, fried “special selection tempura teishoku.” The set meals come with wakame sea weed soup packed with Naruto wakame. Lots of local sake and shochu available too.

    The main Okamoto Chuka shop is located along Prefectural Route 17 that bisects Komatsushima City, Tokushima Prefecture. This Tokushima ramen shop has continued the tradition of making ramen since their beginnings as a ramen stand shortly after the war. Straight medium-fat noodles are entwined in the rich pork bone based Tonkotsu broth. The meat ladened Chuka Soba Nikuiri is recommended for its Chashu slices, cut from Awa pork, amply served atop the noodles covering the whole bowl. The popular sushi from the Komatsushima main shop is a locally held secret as well.

    細麺で、ややあっさりめのとんこつ、塩味は強めのラーメンでした。人気店のようで、タイミングによっては並ぶようですが、偶然すぐに入れました。煮卵も半熟で美味しかったです。

    Momijitei is an Iya Soba (buckwheat noodles) restaurant in a converted traditional farmhouse with a marvelous atmosphere, situated above the Oboke Gorge. The restaurant specialty is handmade Soba noodles made with locally-sourced ingredients. Diners can ask for Udon noodles instead if they prefer (at the same price). In the winter months, the restaurant also serves Oden, which is very popular too. Diners enjoy impressive views of the gorge through the windows as they eat.

    Iya Bijin is a restaurant that offers spectacular views of the mountains lining the Iya Gorge and of Iya River. The restaurant makes its own noodles, handling the whole process from the initial stage of Iya Soba buckwheat powder manufacturing through to noodle-making. Besides Soba noodles, Iya Bijin also offers a range of other dishes that embody the natural glories of the Iya region, including Soba-gome-zosui (buckwheat porridge) and grilled Amego (Masu salmon), etc. Tables on the open terrace-which affords brilliant views of the Iya Gorge and Iya River-are particularly popular. The restaurant even offers a variety of uncommon parts of pork such as stomach, diaphragm, and tongue root, each served with salt and pepper. In addition to charcoal-grilled pork, beef, chicken, and seafood, the restaurant also offers sashimi, steaks, stews, and other items. Course meals are also available as well, but require a reservation. We recommend finishing off your meal with a helping of Handamen. This dish of fine Handa somen noodles, a Tokushima original, is served in a bowl of pork soup.

    This udon noodle restaurant opened in 1965. The ability to take in views of the Miyagawauchi River while enjoying a washbasin full of udon noodles has kept it popular all these years. Their flavorful secret dipping sauce, made with plentiful amounts of more than 10 stock ingredients including dried sardines, kombu seaweed, and katsuobushi (shaved dried skipjack tuna), is provided with a beaten egg in a small pot. Other popular items include their karaage (Japanese-style fried chicken), which is tossed in a home-made sauce, and grilled shiitake mushrooms, which are grown on natural logs in Awa City and served with ponzu (yuzu citrus and soy sauce) and sudachi citrus.

In addition to several varieties of churro, some of the café’s other popular items include sudachi squash, the “soul drink” of Tokushima, sudachi sorbet, and soft-serve ice cream topped with oiri (colorful soft rice crackers).

    This restaurant serves amego (red-spotted masu trout) raised in the pure water of clear local streams. Amego is a fish with a light, mild flavor that is available all year. The restaurant’s specialty is its amego no hirara-yaki, Hirara means a flat stone in this region, and hirara-yaki, a dish of tofu, vegetables and amego cooked with miso, is traditionally cooked on the stone. Other items on its menu include seasonal fish served as salt-grilled, sashimi, or in tempura, as well as amego sushi, amego soba (soba noodles served with amego), and Iya soba noodles. The restaurant has preserved its original flavors since it opened as a regional cuisine restaurant more than 30 years ago.

    This venerable Tokushima-style chuka soba (Chinese noodles) shop opened in 1951. The richness and mild flavor of their soup, a recipe passed down from the first owner, makes their chuka soba truly exquisite. Their ribs, which are cooked with a sauce that has been made by adding more new sauce to the original sauce for over half a century since their founding, are also excellent. Their most popular item, though, is their wonton soup, which features plenty of wonton noodles served in the same soup as the restaurant’s chukasoba noodles.

    鳴門で渦潮見て鈍行で大阪へ向かう日でしたが、乗継時間がだいぶありどうしてもこの店で徳島ラーメンを食べたかったので、徳島へ戻り訪問! ランチ時で僕以外は全て地元民でしたが、月見そば肉入りのラーメンはスープも濃厚でお肉たっぷりの卵を絡めた徳島ラーメンはとても旨かったです。

Their most popular item is their noko gyokai tonkotsu tsukemen, which features their irresistibly slippery and springy dipping noodles served with a rich dipping sauce made from a combination of both pork bone and seafood-based soups.
