    This restaurant in Nishidaiku Town, Tokushima city, Tokushima Prefecture specializes in Tokushima ramen, and fans visit from all around the country. There’s often a line outside, and signatures from celebrities adorn the interior. The pork bone and soy sauce soup is flavored with dried fish and other seafood along with vegetables. It’s topped with a raw egg and contains salty-sweet pork back ribs and chewy homemade noodles, which the rich soup complements well. It goes very well with rice, too. Only counter seating is available, but the interior is spacious, so there’s no problem with entering alone.

    This is a Tokushima B-class gourmet (reasonable and delicious) ramen shop. It serves ramen in rich soup made from slowly-cooked pork bones. The main topping is thinly-sliced pork belly simmered in a sweet but spicy marinade. Each table has a bowl of raw eggs and you can add as many of these to your noodles as you like. The shop’s website shows a photo of ramen topped with the yolk only, rather than the whole egg. You can also add marinated soft-boiled eggs so you can enjoy two different flavors of eggs.

Their soup, which has been developed through continuous trail and effort, has a mild yet rich flavor. It meshes well with their homemade medium-thin straight noodles.     This venerable Tokushima-style chuka soba (Chinese noodles) shop opened in 1951. The richness and mild flavor of their soup, a recipe passed down from the first owner, makes their chuka soba truly exquisite. Their ribs, which are cooked with a sauce that has been made by adding more new sauce to the original sauce for over half a century since their founding, are also excellent. Their most popular item, though, is their wonton soup, which features plenty of wonton noodles served in the same soup as the restaurant’s chukasoba noodles.

The store is built in the Sukiyazukuri architectural style, an architectural style based on the Japanese tea ceremony house. Confectionaries using carefully selected Shikoku and Tokushima regional ingredients such as Kitagawa Yuzu citrus and Sudachi citrus, Naruto kintoki sweet potato, Awa bayberry, and Itano Wasanbon sugar are popular. The most famous sweet is a rice cake called “Awayu” which is green Azuki bean paste wrapped in soft Habutae mochi.     Cafe Takashima is a long-established café, founded in 1959. The retro-style wooden pot-shaped sign outside the café is very striking; apparently the café owner spotted this sign while on a trip to Italy, fell in love with it, and bought it to take back to Japan. Inside the café, the large table made from a single plank of wood, with a very tasteful design, attracts the eye. One of the most popular items on the menu is the hamburgers, which are made by heating the buns on a specially-made metal plate; rather than using regular round buns, the café uses thin slices of bread. The café’s Special Burgers include hamburger meat, ham, eggs, cheese and vegetables, providing a very substantial meal at a reasonable price.
