    Ganso Kawara Soba Takase is a restaurant in Toyoura district, Shimonoseki City that is reputed to have been the first restaurant to serve Kawara Soba (Soba noodles served on a heated Kawara tile). Kawara Soba was originally developed by Takase Shinichi (the first-generation owner), inspired by the story that, during the Satsuma Rebellion of 1877, hungry solders heated Kawara tiles to cook wild grasses and meat; this dish has subsequently become very popular. The restaurant's Unameshi (steamed rice with eel), made using domestically-produced eel, is also very popular.

Their specialties include their sanzokuyaki (""bandit-style"" char-grilled chicken legs), sanzoku musubi (""bandit-style"" rice balls), and sanzoku udon (""bandit-style"" udon noodles). Other offerings include char-grilled Sumeragi beef as well as dishes featuring river fish such as masu salmon and sweetfish. The restaurant also a cafe menu including coffee and sweets. Its building features a motif based on Yamagata Prefecture's kabutozukuri taso minka (multi-level folk homes with helmet-shaped gables). The restaurant offers a variety of seating options available including counter seating around a traditional Japanese sunken hearth, horigotatsu (sunken kotatsu), and private rooms. There is also an adjacent souvenir shop."

    萩の町並みに見とれて歩いていたら結構疲れてしまいました。博物館からの帰りに見つけたのがこのお店です。外観は蔵風のカフェで、内装は洋風のかわいい感じ。奥様たちが歓談していました。観光客向けの店なのかどうか分りませんでしたが、とりあえずコーヒーを注文。丁寧に落したコーヒーは疲れた体を癒してくれる至福の一杯です。カップも綺麗で、美味いコーヒーでした。

    A Japanese restaurant in Shimonoseki City. Come try Japanese cuisine that uses Shimonoseki’s specialties: puffer-fish in the winter and live squid in the summer. The puffer-fish is carefully prepared and served as sashimi with nice texture or in a puffer-fish hot-pot. The mouthfeel and sweetness of the squid is a delight to the senses and is prepared in a variety of ways including raw sashimi, shumai dumplings, and fried tempura.

    特に調べて行ったわけではありませんでしたが、家族の誕生日に出かけ、ちょうどお昼ということで立ち寄りました。予約もしていなかったので混雑しているようなら他所でもいいかなと思っていたところ、2Fの部屋に案内され完全にプライベートランチでした。天気もよく関門海峡を眺めながらのゆっくりとした食事でした。瓦そばがメインですが、他も上品な味でした。

The cafe is situated in an old mansion within extensive grounds (covering approximately 2,640 square meters), creating an atmosphere that is not only luxurious and elegant but also calm and relaxing. The superb food served at Hotoritei makes extensive use of fresh local ingredients from Yamaguchi Prefecture, including fish caught nearby off the coast of Hagi.

    雰囲気は申し分なし。 ランチが物足りなかったので、デザートを求めてお茶しに来ました。 かき氷を食べましたが、なかなかの食べ応え。 周りで食されているランチもなかなか美味しそうでしたので、次はランチで来たいと思いました。

    Hagi Shinkai is a restaurant next to Hagi Bridge specializing in Fugu (Pufferfish) and fresh fish from the restaurant’s own fish-tanks; the restaurant building, which resembles a white lighthouse, is very distinctive. Inside, the restaurant has the finest fish-tanks in Yamaguchi Prefecture, with squid, stonefish, flounder and other local fish species swimming around vigorously. Hagi Shinkai is famous for its squid dishes (made using squid from the restaurant’s own tanks), which have an exquisite flavor that permeates every mouthful; for these dishes, the squid is ultra-fresh, not being taken out of the tank until immediately before the dish is prepared. The Fugu (Pufferfish) set meal, which is available in the winter months, and the flounder set meal available in the summer months, need to be booked in advance.

    Fair warning the staff does not speak English nor do they have an English menu. It does help to know some Japanese phrases or at least be quick with google translate. The staff is fantastic and...

    "This restaurant specializing in zosui (rice in thick broth) is located an approximately 12-minute walk from Shinome Station on the JR Yamaguchi Line. You can taste a variety of zosui from classics such as meat, fish, curry and kimchi, to items you rarely see elsewhere. Made a serving at a time in an iron pot, it is very filling. Their ""yokubari zosui,"" which contains plenty of seafood such as crab, scallops and shrimps, is one of the restaurant's popular menu items. In addition, you can also choose toppings such as mochi rice cake, kimchi and raw egg."

    ときどき利用しています。ときどきメニューが更新される楽しみですが、お気に入りのメニューがなくなった時はちょっとがっかりします。駐車場は広くなく、お昼時に行くとスペースがありません。道幅に余裕がないので、道路わきに停めるわけにもいきません。早めに行くかお昼時を外していくのがお勧めです。

    Kotokoto is a cafe and gallery located in Gofuku Town, Hagi City, Yamaguchi Prefecture and run from an historic old town house. Inside is a relaxing space decorated in an old fashioned Japanese style with Nordic chairs. Guests can enjoy a cafe menu such as marmalade toast with lots of homemade marmalade while gazing over the serene inner garden. For lunch, the curry made with vegetables from Hagi is also popular. The gallery sells Hagi-yaki pottery, towels and accessories among other things.

    Kimono Style Café is located opposite the former residence of 19th-century statesman Kido Takayoshi, in 2 Chome, Gofuku Town, Hagi City. The Café's menu includes coffee, green tea, desserts and local sakes etc., all served on or in Hagi-yaki potteries. Kimono and yukata (informal cotton kimono worn in summer) rental service is also available; the rental charge includes assistance in putting the kimono or yukata on. Customers who pay for kimono or yukata rental can enjoy a free first drink (excluding alcoholic beverages), along with special discounts on the traditional Japanese craft products and Hagi-yaki potteries sold in the Café.
