A Japanese restaurant in Shimonoseki City. Come try Japanese cuisine that uses Shimonoseki’s specialties: puffer-fish in the winter and live squid in the summer. The puffer-fish is carefully prepared and served as sashimi with nice texture or in a puffer-fish hot-pot. The mouthfeel and sweetness of the squid is a delight to the senses and is prepared in a variety of ways including raw sashimi, shumai dumplings, and fried tempura.

This puffer-fish restaurant is in Shimonoseki. Their signature dish, the Puffer-fish Rice bowl, a bowl of rice with raw puffer-fish and slices of puffer-fish outer skin and green onion, is popular not just with tourists but with the locals as well. Based around the motto of Cheap and Delicious, they also serve dishes such as puffer-fish tempura over udon noodles or Donburi (a bowl of rice with ingredients on top) and fried chicken.

Restaurants in the neighbouring Kamon Wharf should be for tourists and the pricing there seems somehwat expensive. This Kawaku does not look pretty and guests had to buy tickets at the vending...

Hagi Shinkai is a restaurant next to Hagi Bridge specializing in Fugu (Pufferfish) and fresh fish from the restaurant’s own fish-tanks; the restaurant building, which resembles a white lighthouse, is very distinctive. Inside, the restaurant has the finest fish-tanks in Yamaguchi Prefecture, with squid, stonefish, flounder and other local fish species swimming around vigorously. Hagi Shinkai is famous for its squid dishes (made using squid from the restaurant’s own tanks), which have an exquisite flavor that permeates every mouthful; for these dishes, the squid is ultra-fresh, not being taken out of the tank until immediately before the dish is prepared. The Fugu (Pufferfish) set meal, which is available in the winter months, and the flounder set meal available in the summer months, need to be booked in advance.

Fair warning the staff does not speak English nor do they have an English menu. It does help to know some Japanese phrases or at least be quick with google translate. The staff is fantastic and...

"This restaurant specializing in zosui (rice in thick broth) is located an approximately 12-minute walk from Shinome Station on the JR Yamaguchi Line. You can taste a variety of zosui from classics such as meat, fish, curry and kimchi, to items you rarely see elsewhere. Made a serving at a time in an iron pot, it is very filling. Their ""yokubari zosui,"" which contains plenty of seafood such as crab, scallops and shrimps, is one of the restaurant's popular menu items. In addition, you can also choose toppings such as mochi rice cake, kimchi and raw egg."

A long-standing Japanese restaurant said to have been established in 1858 standing at the foot of the Kintai Bridge in Iwakuni City, Yamaguchi Prefecture. Situated in a location with an excellent view of the bridge, this popular restaurant becomes swamped with reservations particularly during the cherry blossom season. Hirasei serves highly seasonal gozen meals and kaiseki course cuisine with a focus on local dishes such as colorful Iwakuni sushi and ohira (vegetables in a clear broth). The restaurant’s courses made with seasonal limited ingredients such as ayu, matsutake mushrooms, and fugu.

"This Japanese restaurant is located near Senzaki Bay, one of the best fishing ports in western Japan. You can enjoy fresh fish and shellfish freshly auctioned off at the Senzaki market in the early morning. The Kensaki squid is called the ""queen of squids"" because of its beautiful, clear shape and soft taste, and it swims in large tanks. Only those that have been carefully caught one by one in Senzaki are called ""Senzaki squid,"" and the Senzaki squid from when the ""Senzaki In-Season Declaration"" was announced are called ""Senzaki butoika."" Their fresh squid course with Senzaki squid sushi and other small dishes such as fried items, is a loved signature item that you will not forget once you try it."

The Unidon Teishoku meal set features a rice bowl topped with loads of fresh Hagi-caught sea urchin with sides of local seasonal vegetable dishes, and is popular for its hefty volume. Their Sansai no Kamameshi Teishoku meal set features local rice cooked in clean spring water with sea urchin, turban snails, chicken, and mountain herbs. The udon is light and refreshing, finished with slices of local natsumikan summer citrus, making it perfect for a quick bite during your castle town stroll. With advance reservations you can also try home-style dishes like Itokoni (chilled clear soup containing shiratama-dango sticky rice flour dumplings and azuki beans), and Noppe Jiru country stew made with vegetables and chicken.

This restaurant is known for its hearty fisherman's cuisine and the cheerful shop mistress. The interior has a surprisingly home-like, familiar atmosphere, which is perfect for enjoying their locally sourced seafood dishes. Their most popular dish is the Unidon Teishoku, featuring a whole box of raw sea urchin over rice. It's an extravagant meal set, with a sashimi platter of treats like yellowtail amberjack, squid, octopus, and more, and small side dishes and miso soup. Other delights you'll want to eat every day include the Amadai no Misoyaki Teishoku meal set with miso-roasted tilefish, or the old stand-by Sashimi Teishoku meal set. There are plenty of regulars and tourists who come by just to enjoy a talk with the mistress, as well!

"This seafood restaurant is inside Roadside Station Hagi Seamart. There is a seafood market connected to the facility, meaning they have access to the freshest fish and more. Their Gokujo Akaunidon rice bowl features lavish servings of red sea urchin, sometimes called the ""phantom urchin"" for its rarity, and is only available from May to October. The elegant sweetness fills your mouth with every bite of this decadent dish! The shop's most popular dish since its founding, though, is the Kihagi Special (seafood rice bowl), which features loads of locally caught fish with a house-made sauce that brings out their natural flavor."

Yamaguchi Areas

around-area-map

Heading west along Japan’s largest island, Honshu, the very last prefecture you’ll reach is Yamaguchi, separated from Kyushu by a small strip of water known as the Kanmon Straits, which the far-reaching harbor city Shimonoseki looks over. With water at every turn, the seafood of Yamaguchi is an indisputable highlight, and we’re not talking just the usual fish dishes - the notorious fugu, or puffer fish, is a Japanese delicacy that was discovered in Yamaguchi prefecture, making it the best place to try it out.
