    A restaurant located in the Hachiman community center operating out of the former Sanpoku-machi Minami Junior High School building, which was closed in 1996. The restaurant provides dinner and breakfast for lodgers staying in the center and is also open to non-guests as a standard restaurant. The popular Kagaribi-don seafood rice bowl consists of locally-grown Koshihikari rice topped with an abundance of pickled sashimi. Customers rave about the fresh, seasonal seafood served at reasonable prices. Depending on the season, customers can also enjoy Iwagaki oysters from Sanpoku.

    This restaurant adjoins the Royal Tainai Park Hotel standing on a lake and surrounded by natural beauty. Modeled after a water mill, the restaurant stand’s on the hotels grounds and is enclosed by lush trees. The establishment serves fragrant, authentic handmade soba noodles which have many fans throughout the prefecture and beyond. Served fresh and piping hot, the restaurant’s noodles are made with flour stone-milled from buckwheat grown in Tainai. Underground spring water from the Tainai River gives the vaunted noodles a firm, chewy texture. Everything, from the edible wild plants used for tempura, to the condiments and chili pepper garnishing the tables is home-grown or gathered, and the restaurant is known for its use of fresh, just-picked ingredients from the mountains of Tainai.

    Niigata Nagaoka-shi Teradomari Shimo Aramachi 9772-35
    A restaurant on the second floor of the Teradomari Hamayaki Center situated along the Teradomari Fish Market Street, also known as the “Ameyoko of Fish.” Here you can enjoy the same fresh-caught fish sold in the market, which is visited by 5,000 tourists a day on average. The only establishment in the Teradomari Fish Market Street which has its own fish preserve for crabs, many customers find themselves unconsciously stopping to look at the large snow crabs shipped straight to the restaurant each day. The fresh-boiled crab served inside is not only outstandingly tasty, it’s perfectly cooked as well. The establishment is also located close to a tourist bus parking area, ensuring it bustles with customers no matter the season.

    A long-established Japanese confectionary shop which has continued to pursue and build on a philosophy of confection creation and works hard every daysince it opened in 1805. The establishment offers authentic confections unchanged since the Edo period, diligently crafting its sweets using choice, high quality ingredients and tools passed down through the years. Its signature Ote Manju buns are a sakamoto manju made with sweet, top quality Hokkaido adzuki strainedbean paste mixed with kokuto brown sugar from Okinawa, wrapped in a fine dough bearing the faintest sake fragrance. The shop’s buns are bigger than standard and are made without the use of any preservatives whatsoever. Customers can enjoy them fresh or lightly fried in butter almost like a donut.

    This long-standing Japanese confectionary shop has been in business for over 230 years. The shop continues to make the koshi no yuki, a renowned confection records state was invented in 1778 to present to the then-lord of Nagaoka Domain when he was sick in bed. Considered one of Japan’s three greatest traditional confections, the cakes are made by kneading together flour made from delicious mochi rice, a specialty produce of the Echigo region; and wasanbon fine-grained Japanese sugar from Shikoku. The simple ingredients and simple production method mean its flavor is nothing but to real thing, and this fine establishment continues to share the tasty treat with the world today. The shop also carries an abundant array of other confections, including higashi dried candies inspired by seasonal scenery; namagashi fresh Japanese sweets; and yokan jelly made with Le Lectier pears, a Niigata specialty product.

The chef particularly recommends the special oyakodon chicken and egg over rice, which is topped with huge chunks of brand name Koshi no Tori chicken raised on herbs amidst the area’s abundant natural beauty. The choice dish consists of flavorful thigh meat wrapped in thick, creamy scrambled eggs seasoned with Japanese dashi stock. It also comes with a seasonal nimono stewed dish, aemono side, homemade pickles, and soup; a hearty meal choice, its reasonable price is also a plus.

    A regional cuisine restaurant located a 10-minute walk from the Untoan Temple, a Buddhist temple where the samurai Naoe Kanetsugu and the samurai lord Uesugi Kagekatsu studied in their youths. The restaurant’s building is constructed entirely of Japanese zelkova wood and was built some two centuries ago; inside, customers can enjoy the simple flavors of the area’s local cuisine. Particularly recommended is the Shikagoya Teishoku, which comes with a large number of local specialty dishes. The hearty meal includes cold zaru soba noodles made with local buckwheat flour, tempura, rice, and seasonal side dishes. The restaurant also serves many dishes you’ll find virtually no place else, such as deep fried karaage made with rare local Japanese fluvial sculpin; and kirizaidon, a rice bowl which is a popular cheap eat inMinamiuonuma.

    A Japanese confectionary shop standing in the former town of Muika, birthplace of the samurai Naoe Kanetsugu. The shop makes and sells confections utilizing choice ingredients from Minamiuonuma. The shop’s signature Oroku Manju are a type of brown sugar manju bun made one at a time by wrapping a carefully prepared skinless sweet bean paste in a chewy kokuto brown sugar dough. The shop uses high grade kokuto brown sugar from Tarama, Okinawa, which has a unique color and flavor and contains an abundance of Vitamin B1 and B2 as well as potassium, calcium, and other nutrients. A Muika Town specialty produce, the recipe for the buns has been passed down for generations, and even today the tasty confections are loved by people of all ages.

    A long-standing Japanese confectionary shop established in 1894. The shop continues to make its signature Kuro Yokan jelly according to a secret family recipe passed down to only one son “isshisoden” from the day it was founded. Notable for its pitch black color, the jelly has a traditional, old-fashioned flavor and is made by kneading mineral-rich Okinawan kokuto brown sugar to its limits and carefully mixing it with Hokkaido adzuki beans, zarame granulated sugar, and ito kanten algae gelatin. The shop still performs the entire production process in-house, starting with the making of the jelly paste and ending with its packaging. The beautiful, lustrous jelly is visually stunning and is a perfect gift for Mother’s Day, birthdays, and other events. One recommended way to enjoy the jelly is to let it sit for a short time, which results in the brown sugar hardening and giving the jelly a slightly crunchy texture.

    This Japanese and Western-style confectionary shop, established in 1961, is one of the most prominent in Kashiwazaki. Situated one street down from National Route 8, the shop can be identified by its whipped cream white and chocolate brown exterior. Since it was founded, the shop’s most celebrated product has been the Ayakomai, an elegant baked sweet filled with a brown sugar, walnut, and sweet adzuki bean paste. The confection is said to have been invented in order to preserve for future generations the name of the “Ayakomai,” a traditional dance dating back more than 500 years in Kashiwazaki which was in danger of dying out. Also popular are the shop’s assortments which include the soft, milk-flavored, baked Symphonia; and the Kaze no Mai Sable hazelnut cream-filled wafer cake.

The restaurant’s windows offer an expansive view of the area from1,000 meters above sea level. In the morning, the establishment serves an orthodox Western-style breakfast. Have the American breakfast, which comes with an omelet, sausages, and ratatouille; or the healthy breakfast, which comes with steamed vegetables and ham. Breakfast and dinner are by reservation only. If you are lucky, you just might get to see an “unkai” sea of clouds unfurling beyond the windows.

    A long-standing sushi restaurant situated along Honcho-dori Avenue in Chuo Ward, Niigata City, Niigata Prefecture. The shop was opened in the early Showa period by the first owner, who sought to bring Tokyo-style raw sushi to Niigata. Today, Sushi Yasu continues to preserve the traditional tastes and techniques of that time. The restaurant uses only fresh, natural ingredients in its sushi, including seasonal local fish. Popular menu items including the “kiwami,” a set of 10 pieces of sushi, dashi-maki-tamago rolled omelet, and bowl of soup, the lunch chirashi-zushi; and the homemade castella Tamago-yaki omelet—only a small number of which are offered each day. The restaurant only has eight counter seats and “koagari” raised tatami mat dining area with a single table. Sushi Yasu is popular not only with locals but also tourists from within the prefecture and beyond.

    A café situated inside a shed which belonged to an old shipowner’s home in Shukunegi, Sado City, Niigata Prefecture. The old-fashioned interior draws the eye with its old furnishings and black beams and pillars. The red tables, made from an old tarai-bune boat used in the area, are sure to make an impression. The café’s lunchtime pasta is made with chewy fresh noodles. The café also offers a popular homemade dessert menu, including cakes and zenzai sweet bean soup with shiratama rice flour dumplings.

The shop is representative of “Niigata Assari Ramen,” one of the five major types of Niigata ramen, and is a famous shop, which receives customers from all over the country. The transparent soup has a soy sauce base, with pork, onion, dried sardines, among other ingredients, and has a well-rounded, yet rich flavor which customers never tire of. Its compatibility with the super thin noodles is exceptional. The interior of the shop is nostalgically reminiscent of the Showa period.

The shop operates out of the first floor of a mountain hut-style building diagonally across from the Niigata City Aquarium Marinepia Nihonkai. The shop’s gelato, handmade each day, is created with all natural ingredients, including select pasteurized milk, seasonal fruits, and vegetables. At any given time, the shop sells over 12 varieties of gelato out of a list of over 100 recipes. The shop has a roofed terrace seating area and serves both eat-in and takeout customers.

    A Japanese food bar located along Keyaki-dori Avenue a five minute walk from Niigata Station. Dedicated to the concepts of local consumption and farm-fresh, Kazahana serves creative Japanese cuisine made with Niigata ingredients such as pesticide-free Koshihikari rice and vegetables (picked just that morning) provided by contracted farmers, fresh eggs and seafood. The bar’s meat and fish dishes fried on lava stone in the open kitchen visible from the customer tables are particularly popular. Kazahana’s sashimi and abalone steak are also well-reviewed and go well with the bar’s selection of local sakes. Kazahana has a casual, Western-style atmosphere that makes it easy even for customers on their own to come in.

    A cafeteria operating out of the second floor of the Kakujoe fish seller’s annex along Teradomari Fish Market Street (Sakana no ameyoko) in Nagaoka City, Niigata Prefecture. The restaurant primarily serves rice bowls and set meals which let diners enjoy fresh delights from the Sea of Japan, including crab, ikura salmon roe, and Alaskan pink shrimp. The restaurant’s most popular item is the exciting crab ramen—a whole red snow crab served in a bowl of ramen broth. The flavorful broth, made with chicken bones, soy sauce, and crab, becomes even more delicious when you mix in the red snow crab’s innards. Shionohana’s seafood rice bowls, piled high with seasonal fish, are also well-reviewed.
