Uonuma no Sato Sobaya is a soba noodle shop located in the sightseeing spot Uonuma no Mori in the city of Minami Uonuma in Niigata Prefecture. It is housed in a distinctive building that was rebuilt out of parts taken from an old house, and it has an earthen floor and an open hearth to add to the somewhat nostalgic atmosphere. Unlike most soba in Uonuma, which is made using funori seaweed, this restaurant serves mostly Edo-style Nihachi Soba, in which the noodles are made by hand, using carefully selected buckwheat mixed with wheat flour. In addition to Mori Soba, cold noodles served with a dipping sauce, the restaurant also serves country-style soba, pure buckwheat soba, and Ten Seiro Soba, which is topped with plain and deep-friend vegetables.

This unique soba shop is found in the Matsu-no-yama Onsen area. Jazz flows through the bar-counters inside the shop mixing with the scent of dashi soup stock and noodles. The antiques around the shop were chosen by the owner who describes himself as a middle-aged delinquent. Coffee is served mid-day, cocktails at night, and can be had with their specialty soba made with spring water that wells up in the shop. Lots of their menu items include the local specialty nameko-mushrooms including their Exotic Curry Soba, perfect for after drinking, which combines the curry aroma with the thickness of the nameko-mushroom into a masterpiece dish.

This soba shop can be found in an old-fashioned building in front of Yakushinoson Park, beneath Mt. Yakushi. The soba is used to bulk up the yam, and the young leaves of the buckwheat are crushed and added to the mix. This is done to enhance the flavor and nutritional value of the meal. The tables have their own cooking fire, giving the shop an authentic, traditional atmosphere. The most popular item on their menu is the tempura soba, with its freshly cooked tempura. The udon and soba served on the same bamboo tray is also a favorite.

This soba noodle shop in Tokamachi is famous for its hegi soba (buckwheat noodles made with funori seaweed). Famous enough, in fact, that members of the imperial household? have visited the shop and presented its hegisoba to the imperial household several times in the past. The shop's Original Funori Tsunagi soba, which was developed over the course of many years, is popular for its velvety taste and its soft, springy texture. Made with hikigurumi (whole grain) buckwheat flour ground in-house using a traditional millstone, it uses funori seaweed as filler instead of the usual wheat flour.
