    This is a well-known udon shop that was established in 1925, and is famous for miso nikomi udon, a dish among Nagoya’s home cooking. Using a dashi soup stock carefully prepared with bonito, shiitake mushroom, and kombu (kelp) combined with secret proportions of soy sauce, mirin, Haccho miso, and light-brown miso, the dish has a mellow taste that is very appealing. The chewy raw udon noodles made with 100% Japanese-grown wheat cooked in a Shigaraki pot is a characteristic of this dish. The menu is listed on the wall and the restaurant interior has a nostalgic ambience.

    For approximately 100 years ever since it was founded in front of the main gate of the Toyokawa Inari temple, Monzen Soba Yamahiko has continued to maintain its traditional taste. It makes its own noodles for kishimen, soba, and udon using time-honored Japan-produced wheat flour while its famous product is Inaho Inari Zushi. This inari zushi is “gomoku inari” as it has five types of ingredients for good fortune. It is also very popular for souvenirs. The shop is approximately six minutes on foot from JR Toyokawa Station.

The noodles, painstakingly kneaded by skilled chefs, have a distinctive chewy texture. The flavor's deciding factor is the original miso fermented for over three years with soup stock derived from carefully selected bonito. And after gently simmering the noodles in a pot, the rich flavor of the nikomi udon is finally complete. The restaurant is fresh and clean, and convenient, even for women by themselves.     This long established udon restaurant located near the tourist spot of Takeshima Island in Gamagori City, Aichi Prefecture, was founded in 1903. The udon noodles are made with locally sourced flour and kneaded by hand for two days to produce a characteristically chewy texture and great tasting flavor. But what makes the flavor really stand out is the fragrant broth lavishly made with only frigate mackerel bonito. In addition to their regular favorites such as ‘benten’ topped with two extra large tempura king prawns, and ‘ryujin udon’ topped with fried stuff in starchy egg sauce, their Takeshima udon with lots of clams and available only from March through to June, is also very popular.

The udon noodles are especially chewy in texture and the broth is a closely guarded secret! The clear soup made with dried bonito and horse mackerel shavings and the soft noodles are particularly good and go together well with toppings like kakiage (mixture of vegetables and other ingredients fried in batter), deep-fried shrimp, meat, and egg. It’s the perfect place to grab some noodles while you’re waiting to catch the bullet train, and it’s a well known noodle bar for those wanting to grab a quick bite as the train makes a quick stop.

The secret miso recipe blends red and white miso kept at a specific temperature and humidity to match the maturation of the noodles, and it features a rich flavor with no bitterness. The soup stock contains mackerel scad, dried bonito, frigate mackerel, and smoked mackerel to bring out the flavor. The thin, square noodles are soft, chewy, and go well with the broth.

There’s also “sanshoku-zen” and “happo-zen” sets as well as the popular “miso kishi.”
