Because the word for these apprentices is “decchi” in Japanese, the shop’s yokan jelly came to be called “decchi yokan,” and today decchi yokan is one of the Omi area’s most famous local confections. The shop still sells its “Decchi Yokan” made according to the same process as when it first opened its doors, as well as uiro-mochi sweet rice cakes and seasonal confections.
