    This soba restaurant, founded in 1913, is located in Omachi City, Nagana Prefecture and is a three-minute walk from Shinano-Omachi Station. They offer “Shio no Michi Soba,” which refers to the “Chikuni Kaido” (commonly known as Shio no Michi, “Salt Road”) trade route that was once used to transport salt and marine products from the Japan Sea to Matsumoto. This popular dish is made with ingredients from the sea and mountains and topped with grated radish that resembles salt.

    土曜日の13時過ぎに入店。大盛りのもりがないとのことだったので かけそばともり1枚を注文。店内は混んでいないのに出てくるまで 20分もかかった。もりのつけだれは出しがきいて美味しかったが なぜかかけのつゆは出汁がきいてなく甘いだけだった。 これで1,450円は高いと思う。あとで気づいたが駅にもスタンド 蕎麦がありそちらのほうが半額以下でおいしそうでした。

The soba restaurant is open from 11 to 2 p.m. (last order), but supplies are limited, so you should go as early as possible. It’s about 1.5 hours from the Azumino Interchange on the Chuo Expressway, or about one hour 10 minutes on the Nagano Hakuba express bus from JR Nagano Station; it’s about three minutes from the Hakuba Happo stop.

The special dipping sauce is a unique combination of the mild taste of Kansai sauce and the strong taste of Kanto sauce and the balance of flavouring with the noodles is perfect.     Gyoja soba noodles are associated with a legend in which the people of Uchinokaya Village warmly welcomed En-no-Ozuno, the founder of shugendo mountain asceticism, when he was heading to Mt. Komagatake to practice his religion and to show his gratitude, he bequeathed buckwheat seeds to the villagers. It is recommended that you eat your first mouthful without the dipping sauce to taste the flavour and umami of the soba noodles themselves. It is around half an hour by car from Ihoku Interchange on the Chuo Expressway.

    市街地からかなり中央アルプス方面へ奥深く入った場所にあり、知らなければ見逃してしまうような場所にあります。そばは本格的なそばで、特に10割の田舎そばは、やや硬め、幅広の太打ちで歯ごたえあり。塩をちょっと振りかけて食べると口中にそばの風味が広がります。

It serves a wide range of superb dishes created with care by the owner. The Shinshu miso kurobuta pork katsu set meal is recommended and the marriage of the pork and Shinshu miso sauce made with a secret recipe is perfect.     This restaurant, which is proud of its 100% buckwheat soba noodles made from buckwheat from the Mt. Yatsugatake foothills, makes a rich dipping sauce using seven types of mixed stock which goes very well with the noodles. Since opening in 1988, the restaurant has been working hard to improve the noodles and develop its menu while maintaining unchanging flavour. It is definitely worth trying the magnolia leaf and wild vegetable soba noodles in the summer and the tempura bowl set in the winter. The nearest station is JR Chino Station.

    6月末まで延長された、ゴーツーイート券を、使うために訪れたが使用を拒否しました 。現金に換えるのが面倒なのかもしれませんが、長野県が税金を使って応援をしている意味が分かっていません。味云々の前にこういう店がはびこっていることが許せません。

    Azumino soba makes me happy. this restaurant is near the hotaka station. Wasabi is good too. so soba and wasabi are recommended.
