A restaurant where you can enjoy delicious soba noodles surrounded by the abundant natural beauty of the Noto Peninsula. Since it opened in 2003, the restaurant has won itself many fans. The restaurant serves noodles made by hand using flour carefully ground from high quality, Horokanai-grown buckwheat in order to preserve its flavor. In addition to soba noodles, the restaurant also offers combo meals, seasonal dishes, a la carte dishes, and course meals (advance reservation required).

This restaurant started as a tofu shop in 1948 and later operated as a general store and a restaurant before resurrecting ikki soba, a local soba noodle dish native to the Torigoe area, in 1981. Operating out of a traditional old Japanese home with a working water wheel, the restaurant serves the Chosuke Gozen meal, which is particularly recommended. The hearty and healthy meal comes with seasonal vegetable and edible wild plant tempura, kata-dofu hard tofu sashimi, a nimono stewed dish, a seasonal side, rice, Japanese pickles, and a small serving of soba noodles.

Delicious handmade soba using lots of local ingredients. The building is old and traditional and very peaceful. My favourite is the Ikko soba lunch set, which has mochi in the soba!

An agricultural activity center where you can try making soba noodles by hand. The community-oriented center has a market selling seasonal, locally harvested agricultural products, and also makes and sells foods using local ingredients, and visitors can purchase old-fashioned mochi rice cake, tsukemono Japanese pickles, soba noodles, vegetables, and more. The center’s fun soba noodle making class takes around one hour. Advance reservation required.

This kominka (old house) soba-shop lets you enjoy excellent torigoe soba beside an open fire. They use coarse-ground Torigoe-grown soba flour in handmade soba noodles filled with toothsome texture and aroma. They also have popular desserts like soba flower pudding, soy sauce pudding, and sake pudding. They also offer reservation-only soba making activities.

This store operates as a soba restaurant during the day, and as a bar at night. It is located in a side street of the Higashi Chaya District, in Higashiyama, Kanazawa City, Ishikawa Prefecture. The restaurant is inside a renovated spacious building with a high ceiling that was previously a public bathhouse. It has a mature atmosphere, with muted Jazz music flowing through the peacefully quiet building. The restaurant’s specialty is an aromatic cold soba which goes well with sake. The Shirayuki Torotoro dessert, topped with- fluffy meringue is also popular.

I never really enjoyed soba, but i decided to this a try cause it seems like a lot of locals like to eat here. I was whoa.. its so tasty. we ordered a bowl of the seaweed hot broth soba and the...

A restaurant located in Kawai Town, Wajima City, Ishikawa Prefecture which primarily serves soba noodles, udon noodles, rice bowls, and other Japanese dishes. The stately white walled building roofed with black tiles is quite large and the restaurant can seat up to 120 customers. In addition to casual dishes like zaru-soba noodles with tempura and rice bowls topped with scrambled eggs and tempura, the restaurant also serves popular seafood rice bowls piled high with fresh Noto seafood. The restaurant has a large tatami mat seating area as well as quiet private dining rooms, making it perfect for any dining outing.

"A dedicated soba noodle restaurant situated amidst the mountains of Noto. Operating out of an old fashioned Japanese home from Suzu relocated to this location, the restaurant has a distinctive atmosphere. The restaurant's noodles are made with rare Shinshu Togakushi buckwheat, while the broth is made with flying fish grilled at the restaurant over a charcoal fire. Here you can enjoy flavorful soba noodles made with love and care from beginning to end. The restaurant also actively incorporates local ingredients. The toppings of the restaurant's unique and renowned Noto-don rice bowl are served in a separate, heated bowl, allowing the customer to choose how long to cook them. One little-known yet popular menu item is the ""field cheese"" -smoked kata-dofu hard tofu."

"Enju is a noodle shop located on an island off the Noto Peninsula. It is housed in a remodeled old-style farmhouse of Taisho period (1912-1926), and the walls blackened with soot tell of its long history. The soba served at this restaurant is pure soba, made only of buckwheat flour and water. Four varieties of buckwheat are ground to make three kinds of soba: Sarashina (thin, pale noodles), Hikigurumi(with ground walnuts), and Inaka (with coarsely ground buckwheatflour). Diners can order whichever variety they like, and even ""soba flights,"" which include all three varieties to taste and compare. There are seasonal varieties of soba, too, which have seasonal ingredients mixed into the buckwheat flour."

"A soba noodle restaurant situated along National Route 249 traveling from the vicinity of the Sea of Japan towards the Sojiji Temple. The restaurant serves the kind of ""monzen"" soba noodles which were once presented to those worshipping at the Sojiji Temple when it was the head temple of Soto Buddhism. These noodles are made according to a unique method which uses Japanese yams harvested deep in the mountains instead of water to bind the buckwheat flour; the restaurant's buckwheat flour is also grown locally in Noto. When you chew the noodles, they exude the flavor of Japanese yam, and thus unlike regular soba noodles which you are supposed to slurp, chewing the noodles and savoring their flavor is considered the proper way to eat them. Also of note is the fact that the restaurant only makes use of exquisite Japanese yams stocked from a Japanese yam expert located in Wajima City. Customers are sure to enjoy a bowl of soba noodles unlike anything offered anywhere else."

Long, thin Ishikawa prefecture runs along the Sea of Japan up into Noto Peninsula. Highlights of the seaside towns lining the west coast include Kanazawa, often described as a "Little Kyoto" thanks to its old wooden tea houses and geisha culture as well as its picturesque Japanese garden, Kenroku-en.
