Baian Gyoja soba noodles

Gyoja soba noodles are associated with a legend in which the people of Uchinokaya Village warmly welcomed En-no-Ozuno, the founder of shugendo mountain asceticism, when he was heading to Mt. Komagatake to practice his religion and to show his gratitude, he bequeathed buckwheat seeds to the villagers. It is recommended that you eat your first mouthful without the dipping sauce to taste the flavour and umami of the soba noodles themselves. It is around half an hour by car from Ihoku Interchange on the Chuo Expressway.

市街地からかなり中央アルプス方面へ奥深く入った場所にあり、知らなければ見逃してしまうような場所にあります。そばは本格的なそばで、特に10割の田舎そばは、やや硬め、幅広の太打ちで歯ごたえあり。塩をちょっと振りかけて食べると口中にそばの風味が広がります。

人気店の宿命ですが、お昼時は混雑しています。しばらく待って席に案内され、気になった行者そばを注文。そばは十割の平らなそば。まずは塩で、ひとつまみの塩を振りかけて、そのまま食べる。そば本来の味を邪魔されることも無く味わえます。

桜の時季もあってか、12時に入店で2時間待ちとのことだったため、観光して2時間後に帰ってきた。行者そばと鴨汁を注文。太麺のそばも美味しいが、鴨汁が優しい甘さで、とっても美味。ラストオーダーは14:30だが、土日はこの時間に来ても、そばにありつけないと思う。11時からの開店にむけて、早めに行くべき。
