This restaurant continues to offer the same Kanchu Hikinuki Soba, made from buckwheat flour ground in the coldest winter, as was offered to the Shogunate at the close of the Edo period. The soba from Yamagata and Hokkaido is ground in the water-wheel mill and used fresh in handmade noodles on site. Their ramen Tori Chuka, made with Japanese broth and chicken, was once a staff dish that was only available to a few, but now is a hugely popular dish on regular offer.

Here is famous for tori soba. If you visit yamagata prefecture must enjoy local noodles. Although here is always long queue. You should visit between lunch time and dinner time.

A handmade soba noodle restaurant located on the approach to the Risshaku-ji Temple, one of the most famous temples in Yamagata Prefecture. You can enjoy the smooth texture of the restaurant’s ni-hachi soba noodles until you’re full to bursting. Mitoya also takes great pride in its bota mochi sweet adzuki bean rice cakes. The restaurant’s zunda mochi and fuku mochi rice cakes also have a simple flavor, and you can relax in the restaurant’s confines and enjoy the scenery of the Tachiya River from its windows. Mitoya also offers an abundant selection of seasonally limited items. Highly seasonal dishes include the mountain vegetable tempura in spring and the tomato stewed in lemon juice in summer.

If you are visiting Yamadera and like soba, try Mitoya. Sitting at the counter overlooking the river is the best seat in this small restaurant. The service is good, as is the soba. Enjoy the view and...

    Yamagata Obanazawa-shi
About 10-minute drive from the JR Oishida Station, this soba noodle restaurant is the first soba shop along the Okunohosomichi Obanazawa Soba Highway in Obanazawa City. It is a leading buckwheat producing area within the prefecture. Here, one can enjoy Nihachi soba, a variety made from a special brown buckwheat grain produced locally. This early maturing high-grade Wase grain, which is only slightly polished keeping the hull, is freshly ground, freshly kneaded, and freshly boiled, making a flavorful aromatic pasta. The ita-soba, eaten with home-grown freshly squeezed bitter daikon together with some squid tentacles tempura is highly recommended. Only the Edomae variety of tempura ingredients is use. The juwari-soba is also very popular but is limited to only 20 orders per day, as the buckwheat flour is ground using a hand operated millstone.

    Yamagata Kitamurayama-gun Oishidamachi Jinengo 149
Just 20 minutes by car from the JR Oishida Station, this handmade soba noodle shop is affiliated with the Oishida Soba Highway where soba shop owners have come together to build local pride in their ability to make great soba. Some call the soba of this area hoshi-soba, 'star soba', from the fact that the nihachi type of soba noodles made here are made from the locally produced aromatic, rather course buckwheat flour, and the black specks seen in the noodles look like stars. These soba noodles are traditionally dipped in the local specialty broth, Kiji-jiru, which is made with pheasant meat, grated onions and radish. Although quite strong in flavor, the broth is favored even by women because it doesn't leave an aftertaste. For those soba gourmands, the kaimozu (soba-gaki) is also recommended.

Yamagata Areas

around-area-map

Although often overlooked, Yamagata prefecture by no means lacks appeal: the Yamadera temple trail through the mountains, deliciously tender Yonezawa wagyu, and over 100 steaming hot springs, most notably Zao Onsen, await visitors. When winter comes, the snowcapped peaks become dotted with skiers by day and onsen-goers by night, while summer brings the celebration of juicy Yamagata cherries.
