The shop sells local vegetables, fruits, and processed foods and is a great place to find a souvenir.

    1月10日 三連休の中日に行ってきました。 忙しい時間帯に行ったからかもしれませんが、後から席に着いた人に先に提供されたり、なんかなぁという感じでした。特に蕎麦がいまいちで、みなさんの評判が良かったので、ちょっとがっかりでした。天婦羅はおいしかったです。

It has been featured in a variety of media due to its efforts and delicious results. The soba is a 70% soba blend handed down since Hidehisa Sengoku, the first Lord of Shinshu Komoro clan. This percentage is said to be the best for health. The most highly rated dish would be the “walnut soba” eaten with a sauce meticulously ground from carefully-selected walnuts.

    美味しかったけど食べ終わったあと器から100円玉がでてきてびっくり!更に店員さんはお客さんが入れたんじゃないよね?の発言に追い討ちをかけるような酷いひと言!100円玉が入っていた蕎麦だけお代はいいです、と言われましたがお金払ってももう行きません、草笛さんのお蕎麦を食べたく遠方より来ているお客さんだっているということ、もう少し大事にしてほしい。

    This popular Shinshu (Nagano) soba restaurant serves thin-sliced kyuwari soba (noodles made with 90% buckwheat and 10% flour) made only with buckwheat flour from the Ono District in Tatsuno Town, Nagano Prefecture. Nomugi only serves fresh-made soba and closes when the day’s supply runs out; accordingly, it is common to find a line in front of the shop. The restaurant only serves simple zaru soba (soba served on a draining basket with dipping sauce) and soba in broth with five toppings—shiitake mushrooms, fried tofu, spinach, nori (edible seaweed sheets), and eggs. There are also only 12 seats in the restaurant.

    Sobasho Tateshina Kogen Restaurant is located a 30-minute drive from the Suwa Interchange, or 40 minutes from Chino Station. Drivers can easily spot it if they travel on the Venus Line Scenic Highway northwest from Lake Tateshina. The trademark of this soba restaurant features the face of a Tengu (goblin). The noodles, which the restaurant makes in-house from unpolished Shinshu buckwheat, are characterized by a hearty flavor. Some of the featured dishes are Tororo Tenzaru with grated yam and seven kinds of tempura and Oroshi Soba, in which the noodles are topped with tempura. In addition, the restaurant serves a local Shinshu specialty, Oyaki (stuffed buckwheat dumplings). The restaurant is open until 3 p.m., but be aware that it may close earlier if it runs out of soba.

    Ichiyo is a soba restaurant located along National Route 147. The owners take the utmost care in using only unprocessed buckwheat grown in the Shinshu region and in painstaking preparing it. They make their own stone-ground flour and keep both finely ground and coarsely ground varieties on hand. The soba made with coarsely ground flour has a unique rich flavor and an al dente texture, while the soba made with the finely ground flour has just the right combination of savory and sweet flavors. There are many dishes on the menu, both Zarusoba (soba served on a bamboo tray with dipping sauce) and Kakesoba (soba in broth), as well as udon noodles and small plates.

The restaurant's signature thick nikomi udon soup comes in three varieties - the Inakaya Nikomi Udon, which is filled with pork and vegetables; the Miso Nikomi Udon, made with traditional Nagano miso balls; and the slightly sweet Shoyu (soy sauce) Nikomi Udon.     A Takato soba noodle restaurant situated along National Route 361, 50 meters from the Takato Koenshita intersection in the direction of Ina. The restaurant's vaunted traditional Takato soba noodles are served with a miso tsuyu dipping sauce made with grilled miso dissolved in pressed spicy karami daikon radish juice. The restaurant's karami daikon and buckwheat flower comes from its own farm and local specially contracted farms in Nagano. The restaurant's dedication is particularly apparent in the two varieties of karami daikon it uses, which were chosen as those which most suited Takato soba noodles after trying several different varieties. The restaurant also serves traditional Nagano goheimochi broiled rice cake skewers and horsemeat sashimi as a la carte dishes. In spring, the restaurant serves edible wild plant tempura such as fukinoto, the edible buds of the fuki flower.

    以前の体験ですが・・・・・・・・・・・・・ 高遠城址のさくらとセットでそばを食べに行きました。そばつゆは大根おろしがベースとなり古いスタイルです。腰が強い麺で、江戸そばとはかなり異なる印象ですが、美味しくいただきました。

The restaurant's tempura soba is particularly popular and is served with local edible wild plant tempura from spring to early summer and homegrown vegetable tempura from summer to fall. The restaurant has a laid back tatami mat seating area as well as table and chair seating.

    A three-minute walk from Komoro Station. This soba noodle restaurant is located close to the inner citadel in the center of Komoro Castle Park. The standard cold zaru soba noodles, which reflect the innate flavors of the ingredients used to make them, are particularly recommended. The large sized soba noodles are enough to feed two people. Weather hot or cold, the restaurants noodles come with edible wild plants, mushrooms, deep fried tofu, and grated yam; the restaurant's Daimyo Soba comes topped with all of these plus an egg. Other toppings include tempura and eggs. The summertime only perilla and plum soba noodles have Japanese ginger in them, giving them a refreshing flavor. During the cherry bossom viewing season, customers can enjoy a banquet with an advance reservation. Note that the restaurant closes when its supply of noodles for the day runs out.

    城内にふさわしい感じの古いお蕎麦屋さんですが、ちょっと建物が古すぎるせいか、たてつけが良くないので食べるのにちょっと不安があるレベルです。お店というよりも古民家を流用している感じがします。肝心のそば自体は味も価格も普通という感じです。

Notably, the restaurant's menu primarily consists of soba noodles handmade by the owner, and the establishment only uses buckwheat flour from Nagano. The restaurant also serves regional cuisine made with edible wild plants and mushrooms collected in the owner's own forest. Particularly popular selections include the Awaseju combo, which includes cold zaru soba noodles, a katsudon pork cutlet rice bowl, and unaju eel over rice box; the a la carte char grilled shioyaki style with salt and the goheimochi broiled rice cake skewers are also recommended.     最近は夜の電車で松本に着いて、駅近くのホテルに前泊することが多いけど、さわんどまで行ってしまえば翌日の上高地入りが楽。 この宿は、さわんどのほぼ中心にありながら、道路からはちょっと奥まっているので静か。食事も信州の食材をつかっていてよかった。

    This soba noodle restaurant, originally under the direct control of the Zenkoji Temple, has long been a favorite of temple visitors and locals. Established in 1890, this well-reviewed restaurant has continued to make soba noodles according to a traditional recipe and production method for three generations and received three registered trademarks in 1972. The restaurant's signature Ippin Gozen Soba noodles are made with buckwheat flour from Nagano and have a rich buckwheat flavor.

    長野市の善光寺表参道にあるそば屋さんです。店名の「クイチ」にちなみ、つなぎがかなり少ないそばが味わえます。個人的にはつなぎが少ない方が風味が増すので好きなんですけどね。信州人は基本的にざるそばですが、温かいそばのメニューも充実していて観光客にもオススメです。
