"An udon noodle shop with a large torii gate standing to the side located a 10-minute drive from the Kasai interchange. The shop was opened by a man who apprenticed at the Ikegami Noodle Shop, a famous Sanuki Udon noodle restaurant frequently featured in the media, and customers can enjoy authentic Kagawa-style Udon noodles in the middle of Hyogo Prefecture. The restaurant offers two reasonably priced daily specials as well as a selection of seasonal items. The ""Gaina-chan Udon"" noodles, served in a colorful bowl, are popular with children. The restaurant's set meals come with the Udon noodles of your choice and the restaurant has a wide selection of toppings to select from among."

This veteran udon noodle shop is about ten minutes by car from Kobe-Awaji-Naruto Expressway's Tsuna Ichinomiya Interchange. Founded 100 years ago, their excellent Awaji Island Udon combines the firmness of Sanuki udon with the chewiness of Osaka udon. They've maintained the same flavor since the beginning, taking pride in their healthful broth. Their freshly made kama-age udon noodles are only available at lunch. The most popular item on the menu is their Blooming Onion Tsukemen with fine, wavy house noodles and an entire onion blossom soaking in their naturally flavorful dipping broth.

They serve the local favorite Izushi Sara Soba made with whole ground buckwheat and water from the district. They say their soba is ""freshly ground, freshly prepared, and freshly cooked."""

Identifiable by its paper lantern and sign with a ""henohenomoheji"" face design out front, the restaurant serves orthodox udon noodles made by hand with an emphasis on food safety. Inside, the establishment sports an old Japanese home-style decor and its high, vaulted ceiling engenders a sense of spaciousness and comfort. In addition to fresh-boiled udon noodles, the restaurant's menu includes a full array of teishoku set meals as well as a la carte dishes like donburi rice bowls, karaage fried chicken, and oden hotpot. A soba restaurant located in the Arima Onsen hot spring district. Depending on how they will be eaten, the restaurant makes its noodles with flours made from two different varieties of buckwheat-Shinshu Shinano No. 1 and Dattan Soba. Both varieties are used to make juwari soba noodles made with 100% buckwheat flour and ni-hachi soba noodles made with 80% buckwheat flour and 20% wheat flour, giving customers the opportunity to taste, compare, and choose their favorite mix. In order to allow customers to further enjoy the flavor of the noodles, the restaurant's cold zaru soba noodles are garnished with salt in addition to a dashi dipping sauce. The restaurant offers a free soba noodle making class and, with an advance reservation, customers can choose to make either juwari or ni-hachi noodles and then boil and eat them on the spot.

This udon noodle shop in a refurbished kominka (old Japanese-style house) with a traditional townhouse feel is a one-minute walk from JR Settsu-Motoyama Station's North Exit. Their popular udon dish featuring a superb combination of salty-sweet super-tender beef tendon and crispy fried eggplant comes recommended. They have lots of other creative dishes that go great with a drink too, like their Gorogoro Vegetable Cream of Tomato Udon and their Traditional Curry Udon.

This soba noodle restaurant is located in Tamba-Sasayama, a former castle town area surrounded by lush rural mountain and forest scenery. In an atmospheric establishment decked out in pure Japanese style, the restaurant serves juwari soba noodles made with 100% buckwheat flour boasting superb texture. Chair and sunken kotatsu seating are available on the first floor, while the second floor is a spacious area with irori sunken hearth seating where customers can lounge and relax. The restaurant's juwari soba is made with fresh-ground homemade flour and is also fresh-created and fresh-boiled. The restaurant's soba tsuyu dipping sauce is made with select ingredients and further enhances the flavor of the noodles, resulting in an elegant and smooth flavor.

    Hyogo Tamba-Sasayama-shi Mananjokami 947-8
This handmade soba noodle restaurant is situated on National Route 327. Operating out of an old thatch roofed Japanese home which exudes a nostalgic air of Japan's bygone Showa period, the restaurant serves soba noodles made by hand using the Japanese yams which are one of the Tamba-Sasayama area's specialty products as the thickener. Using a variety of Japanese yam notable for its black coloration and relatively smooth skin, its noodles have just the slightest black tinge to their color. These noodles are nice and firm and have a good texture as well. Customers rave that the restaurant's interior, overflowing with exposed warm woods, engenders a sense of security as if one has returned to one's family home in the countryside. Particularly popular choices include the tenzaru soba noodles topped with seasonal vegetable tempura, and tororo soba topped with grated Tamba-Sasayama yam.

This udon noodle restaurant is located about a 10-minute drive from Tsuna-Ichinomiya Interchange on the Kobe-Awaji-Naruto Expressway. There is always a line to get inside the venerable restaurant, which was established over a century ago. Guests can savor Awaji Island Udon, which combines the chewy texture of Osaka udon and the springiness of Sanuki udon. Their most popular item is their famous Onion Tsukemen Hana, features noodles served with a large deep-fried onion flower in a bowl of dipping sauce. The many delicate cuts that have been made in the onion cause it to open like a blooming flower as it is slowly deep fried.

Hyogo Areas

Hyogo prefecture stretches from the north coast to the south coast on the western end of the popular Kansai region, encompassing verdant mountains, urban beaches, and fantastic historical sights. The prefecture’s main attractions lie along the south coast at Kobe, the prefectural capital, a pretty harbor city best known for its production of the renowned Kobe beef, and Himeji, the home of Himeji Castle, one of the country’s most beautifully preserved feudal castles, perched magically atop a hill.
