You’ll find this longstanding udon shop in Hanzan Town, Marugame City, Kagawa Prefecture. It became famous for its self-service system in which customers pick their own green onions from the field and slicing them themselves. Nowadays, sliced green onions are included in the toppings corner. The udon is known for its supple and springy texture and traditional taste, which has remained unchanged for three generations. There’s “kama-tama udon” (udon with raw egg) and “kake-udon” served in a light broth. The soup stock and toppings are self-service.

You’ll find this popular udon shop near the Museo Marugame Hirai (Marugame Hirai Museum) in Doki Town, Marugame City, Kagawa Prefecture. The noodle recipe was passed down from parent to child, and everything is done by hand, from the kneading of the dough to the stretching, cutting, and boiling. The udon freshly lifted from the pot is a delicacy with a nice, soft surface and a very springy texture. In addition to the “kama-tama udon,” there’s also cold udon and tsukemen noodles similar to zaru-style noodles. There’s only counter seating available, and the soup stock and seasonings are all self-service. The restaurant closes once the noodle supply runs out.

Kagawa Areas

around-area-map

Japan’s smallest prefecture, Kagawa, may take up just a small corner of Shikoku, but it has grown increasingly popular with the recognition of Naoshima, its "art island" in the Seto Inland Sea between Shikoku and Honshu. Just a stone’s throw from the islands, mainland Kagawa’s prefectural capital, Takamatsu, holds history in its castle ruins and its pride and joy, Ritsurin Garden, is known as one of the country’s best gardens.
