"This processed seafood and agricultural products store was established in 1947. For more than 70 years, they have been making handmade fugu blowfish delicacies such as smoked, ochazuke (green tea over rice) and zosui (rice soup) fugu. Their signature smoked fugu has received numerous awards, including the Honorable Mention Award, the Minister of Agriculture, Forestry and Fisheries Award, and the Director General of the Fisheries Agency Award. It is characterized by its additive-free, colorless ingredients that bring out the umami of the fugu to the fullest. ""Oil Rouge,"" which was selected as one of the ""nine ultimate souvenirs that can be used around the world"" by the Environment Agency,"" and ""fugu no chazuke,"" which uses only the delicious taste of fugu, are also popular."

    Yamaguchi Nagato-shi Higashi-fukawa 643-1
"This direct sales store is located next to the head factory for Daitome Kamaboko, a long-established store that was founded in 1887. It is a cozy shop located about a ten-minute walk from Nagatoshi Station selling Senzaki kamaboko fish cakes, a specialty of Senzaki. Senzaki's kamaboko is made by a method called ""yakinuki,"" which means it is grilled gradually from the bottom. Because the heat is applied more slowly than other heating methods, only fresh fish species can be used. The traditional kamaboko ""Genkai"" and the ""Kotome series,"" which has a fluffy texture despite the fact that it is firm, are also popular."

Yamaguchi Areas

around-area-map

Heading west along Japan’s largest island, Honshu, the very last prefecture you’ll reach is Yamaguchi, separated from Kyushu by a small strip of water known as the Kanmon Straits, which the far-reaching harbor city Shimonoseki looks over. With water at every turn, the seafood of Yamaguchi is an indisputable highlight, and we’re not talking just the usual fish dishes - the notorious fugu, or puffer fish, is a Japanese delicacy that was discovered in Yamaguchi prefecture, making it the best place to try it out.
