Using a variety of ingredients, including dainagon adzuki beans, red kidney beans, chickpeas, pinto beans, and white and black soybeans, the shop creates moist, delicately sweet ama-natto made without preservatives or colorings. The shop’s ama-natto is popular with tourists as a reasonably-priced Kanazawa souvenir. The rear of the shop is used as a takeout café in the summer (opens irregularly) where customers can enjoy shaved ice topped with specially prepared mamemitsu beans in sweet syrup.

As stated in its catchphrase, “a store to make and sell,” the store continues to use carefully selected local ingredients to make its fish paste products. The products the store creates are crucial parts of the local diet such as kamaboko, chikuwa and various ingredients for nabe (hot pot-dish), and popular fried food for people to eat while they walk. The store’s most famous product is Himuro Chikuwa, a traditional food made by Kaga master chefs. Every day, from 9 a.m. to 11 a.m., customers can buy freshly-made kamaboko here.

The shop’s signature item, however, is its soy milk soft-serve ice cream. Only available from April to October, people love the tofu-like flavor, natural sweetness, and creamy texture. The tofu ice cream, which is simple in flavor and goes well with soy sauce, is a popular treat to take home. Closest station: Nomachi Station.

    Local people doing their shopping line up alongside tourists at this famous croquette shop, inside Omicho Market. The freshly fried crispy croquettes draw rows of customers, many of whom get buy croquettes to take-away, and others, to eat as they walk. In addition to the classic, old-fashioned meat croquette and vegetable croquette, the shop also sells sweet shrimp, octopus, crab and other seafood croquettes, which are well-received. The nearest station is Kanazawa Station.

    I tried one Shrimp and one crab Korokke. It tastes like a deep fried mashed potato stuffing with filling, and that is a bit what it is. Not bad if you are close by.

    Tsukuda no Tsukudani is located in Shimoshincho in the city of Kanazawa, Ishikawa Prefecture, a neighborhood with an old-style atmosphere. It makes and sells tsukudani, various ingredients simmered in soy sauce and mirin (cooking sake). This shop’s version uses local vegetables and other select ingredients produced in Japan, but no additives. Its flagship product is Kaga no Hakuho, stewed walnuts served in a mochi rice cake shell that looks like a walnut. Other favorite goods are rather creative: Utsuwa Chazuke, ingredients for chazuke (rice with green tea over it) in the wafer, fish tsukudani, and sweets made with Kaga Province vegetables. Gift packs containing a combination of menu items are a popular souvenir of Kanazawa.

    This specialty fu (breadlike pieces of wheat gluten) store is located in Higashiyama, Kanazawa City, Ishikawa Prefecture. It is one of the few remaining buildings that retains its old appearance, and was established in 1875. The store uses only wheat produced in Hokkaido, and only domestically produced mochi rice flour for its raw fu. It has a reputation for the definite old-fashioned flavor of its carefully created homemade fu. Beyond the threshold of the shop curtain which has “fu” written on it, different types of raw fu, baked fu and fu confectionaries are on display. There is also a fu restaurant here, called Miyata Suzuan, which serves kaiseki course meals based on fu and Japanese sweets.

The take-out menu such as “koji drink,” available for tasting in the store, is also popular. The slightly colored “soy sauce soft cream” with the rich taste of milk matching the slight saltiness is a sweet with a new sensation.

    My husband and I had a fantastic visit at the Yamato factory. We enjoyed the lovely tour from Patrick, the koji hand bath, the soft serve in soy sauce and amazake flavors and instant miso making...

The winery uses grapes and Muscat cultivated in earth that is rich in minerals from oyster shells, which arrive here from the Anamizu Bay. The winery produces its wine with a natural fermentation process, in which no heat treatment is used. Customers can purchase the famous wines at the Noto Wine shop. It is also possible to taste them. Tours of the winery are free of charge. (Weekends and national holidays require a prior reservation.)
