Maintaining tradition while at the same time developing new products, the brewery also makes old-fashioned beverages like amazake sweet half sake and doburoku unrefined sake, and Konna Yoru Ni, a new style of sake made with local ingredients from Nagano. Based on a business philosophy of conveying the culture of rice fermentation to future generations, the brewery continues to develop products which meet modern needs while preserving traditions rooted in the Ina Valley region.

The factory's signature Shiga Kogen Miso comes in three different varieties depending on the ratio of koji and has even been introduced on television as Japan's most delicious miso. Staple products include the melt-in-your-mouth Hanjuku Cheese and Hanjuku Chocolate cakes; and the Saku carp-themed Koiguruma, a pair of carp-shaped cakes clasping each other in a circle filled with coarse sweet bean paste and custard cream. Many of the shop's confections cunningly incorporate both Japanese and Western elements, such as the Shinano Oiwake buns filled with a cream crafted from butter, milk, and honey. The Kurumi Mochi walnut cakes and Imo Kintsuba sweet potato flour dough cakes, only available at this location, are particularly popular.

The shop part of the establishment sells okina monaka wafer cakes and tsukimiyagura buns as well as Mimi sables cookies whose package is decorated with Mimi, the establishment's mascot for over 40 years. The establishment's tanuki cakes and jusanya buns are also renowned and have been featured in the media. The second floor restaurant serves 10 varieties of pasta - the hearty ""omori"" large serving is enough to feed three people. The Lorelei B parfait, topped with brandy cake, is also popular."

    いわゆる喫茶店メニーだが、味もボリュームもすごい。隣のテーブルの大盛りパスタはハンパない。少食のため小盛のナポリタン750円をばお願いしたが、それでも他の店では普通より多い。しかも具沢山で美味い。松本に来たらぜひまた訪問したい。

The shop focuses not on low price but rather making high quality senbei according to traditional methods. The shop only uses choice domestic rice and soy sauce. The shop also sells fresh-toasted senbei, a perfect snack to enjoy on the go. Particularly recommended are the close to 20 varieties of miso senbei, such as the Shinshu (Nagano) miso senbei. The shop can also make you senbei crackers with your name on them, though orders take more than a week to make.

    飯綱高原に本店が有るサンクゼール。本店はイタリアのような雰囲気でとっても素敵です。こちらはその小布施支店。 サンクゼールは、系列の久世福も含め、日本各地に店舗が有るので、差し上げるお土産とするには、あまり珍しさが無いかなーと思いつつも、好きなのでつい寄って色々見てしまいます。 今回は飯綱町のリンゴで作られたシードルを自分用に購入しました。

So delicious they've been featured in the media, the shop will let you taste its jams served on top of a small portion of plain yogurt.
