The restaurant also serves other local Nagano cuisine like soba kaiseki course cuisine, basashi horse meat sashimi, and wasabi-zuke pickles. This famous establishment has been popular with locals for ages and is also visited by many tourists.

    This popular Shinshu (Nagano) soba restaurant serves thin-sliced kyuwari soba (noodles made with 90% buckwheat and 10% flour) made only with buckwheat flour from the Ono District in Tatsuno Town, Nagano Prefecture. Nomugi only serves fresh-made soba and closes when the day’s supply runs out; accordingly, it is common to find a line in front of the shop. The restaurant only serves simple zaru soba (soba served on a draining basket with dipping sauce) and soba in broth with five toppings—shiitake mushrooms, fried tofu, spinach, nori (edible seaweed sheets), and eggs. There are also only 12 seats in the restaurant.

    Ichiyo is a soba restaurant located along National Route 147. The owners take the utmost care in using only unprocessed buckwheat grown in the Shinshu region and in painstaking preparing it. They make their own stone-ground flour and keep both finely ground and coarsely ground varieties on hand. The soba made with coarsely ground flour has a unique rich flavor and an al dente texture, while the soba made with the finely ground flour has just the right combination of savory and sweet flavors. There are many dishes on the menu, both Zarusoba (soba served on a bamboo tray with dipping sauce) and Kakesoba (soba in broth), as well as udon noodles and small plates.

When it first opened, the restaurant primarily offered old-fashioned, rural-style inaka udon noodles; it only began serving soba noodles from 1999. Both the establishment's udon and soba noodles are made with Azumino's famous spring water. The restaurant's signature thick nikomi udon soup comes in three varieties - the Inakaya Nikomi Udon, which is filled with pork and vegetables; the Miso Nikomi Udon, made with traditional Nagano miso balls; and the slightly sweet Shoyu (soy sauce) Nikomi Udon. The restaurant also offers dishes made with renowned Azumino wasabi.

    A 50-minute drive from the Matsumoto Interchange. This restaurant adjoins a hotel situated a short distance east on National Route 158 after crossing the bridge from Yunosato Park. Notably, the restaurant's menu primarily consists of soba noodles handmade by the owner, and the establishment only uses buckwheat flour from Nagano. The restaurant also serves regional cuisine made with edible wild plants and mushrooms collected in the owner's own forest. Particularly popular selections include the Awaseju combo, which includes cold zaru soba noodles, a katsudon pork cutlet rice bowl, and unaju eel over rice box; the a la carte char grilled shioyaki style with salt and the goheimochi broiled rice cake skewers are also recommended. With an advance reservation, you can also purchase honey made by Japanese honeybees here.

    This soba restaurant located approximately 10 minutes on foot from JR Hotaka Station is distinctive for its western-style exterior that resembles a lovely pension enveloped in greenery. This is a famous restaurant that is well known for its traditional soba that are handmade with natural spring water from Azamino and soba flour grown at the foot of the Yatsugatake mountains and milled with a stone mortar. They also pride themselves on their soba-tsuyu broth made without any chemical seasonings using ingredients such as wild bonito, konbu (kelp) and soy sauce. In addition to their simple Mori-soba, other well-liked offerings on the menu include the Tenkei-soba which is topped with approximately 10 types of ingredients and the Oshibori-soba that nearly brings tears to the eye thanks to the juice squeezed from a spicy radish.

    This soba restaurant in Nagano Prefecture’s Azumino City is so popular that the reservation book inside the store fills up before the restaurant opens. The interior shows their attention to detail such as tables using old wood and items handmade by artists, all within a dignified environment comprised of an old storehouse with thick earthen walls and wooden beams. The zaru soba which uses the flower buds of wasabi as a condiment is an exquisite item that will make you want to eat more of thanks to its gentle rich-tasting tsuyu sauce and fragrance of the wasabi. The Yukibana Zaru Soba that is topped with plenty of tororo (grated yam) as well as gold dust is also popular. They have an extensive field, soba field, and garden in which hydrangea and cherry trees bloom, which make for nice places to enjoy a stroll either while waiting or after the meal.

    3回目の訪問です。11月15日(日)のお昼にお邪魔しました。大きな窓から見える秋の風情が素敵。案山子、野菊、ハラハラと舞い落ちる紅葉。ざるそばの盛りつけには、娘には野菊、主人のは笹、私のは紅葉が添えられていました。

    At this shop, located in Bandokoro, Matsumoto City, Nagano Prefecture, you can enjoy water mill-ground Bandokoro soba made from scratch by the owner and his soba-farming family. The hand-made juwari soba—which does not use any thickening powder—is well received with its rich flavor and how smooth it goes down. The “soba set” is popular, packed with the good taste of Norikura Highland. Or enjoy local cuisine with items like the “homemade grilled trout in bamboo” which contains trout covered in Japanese pepper miso and wrapped in bamboo leaves.

    漬物と蕎麦のセットで、シンプルですが、とても美味しかったです。 特に漬物に関しては、普段殆ど食べない私でも完食するほど美味しかったです。 後は、メニューの数とコスパがもう少し良かったら文句ありません。

    土曜日の13時過ぎに入店。大盛りのもりがないとのことだったので かけそばともり1枚を注文。店内は混んでいないのに出てくるまで 20分もかかった。もりのつけだれは出しがきいて美味しかったが なぜかかけのつゆは出汁がきいてなく甘いだけだった。 これで1,450円は高いと思う。あとで気づいたが駅にもスタンド 蕎麦がありそちらのほうが半額以下でおいしそうでした。

The soba restaurant is open from 11 to 2 p.m. (last order), but supplies are limited, so you should go as early as possible. It’s about 1.5 hours from the Azumino Interchange on the Chuo Expressway, or about one hour 10 minutes on the Nagano Hakuba express bus from JR Nagano Station; it’s about three minutes from the Hakuba Happo stop.

    This restaurant is famous for its hand-made udon noodles with a history of over 50 years and its breaded pork cutlet containing Omachi kurobuta pork which is perfectly tender and has plenty of umami from the fat. It serves a wide range of superb dishes created with care by the owner. The Shinshu miso kurobuta pork katsu set meal is recommended and the marriage of the pork and Shinshu miso sauce made with a secret recipe is perfect. It is around five minutes on foot from JR Shinano-omachi Station.

    Azumino soba makes me happy. this restaurant is near the hotaka station. Wasabi is good too. so soba and wasabi are recommended.

    This soba buckwheat noodle shop is located in Hokujo, Hakuba Village. At lunch they serve Juwari Soba in limited quantities made with 100% coarse ground Azumino-grown buckwheat and water from the Northern Alps, as well as soba noodles with broth poured over the top, tempura rice bowls, and more. In the evening they offer Nihachi Soba, noodles made with two parts udon flour to eight parts soba flour. They also have a la carte items made from local ingredients and select sake and shochu liquor from around Japan.

    We were lucky to get a table just before they closed (after a 30-minute wait) . The food was simple yet delicious. We ordered horse sashimi, tempura and of course the soba.

    初めてブログを見てから寄ってみましたが、場所が分かりにくく、少々戸惑いました。川岸にある閑静な蕎麦屋さんで、駐車場も3台ほどしか置けませんので注意が必要です。店内の一階の板敷の間のテーブル席に案内されました。2階にも部屋があるようでした。蕎麦は手打ちで美味しく安曇野に来て食べる蕎麦だと感じました。 ぶっかけきのこおろし蕎麦を食べましたが、キノコも美味しく満足しました。
