It offers sushi, donburi rice bowls, set meals, and more made with fresh seafood sourced from the port each morning by the head chef. They are especially proud of their nizakana, a tasty dish made by simmering fresh fish that can be enjoyed by those who do not enjoy raw fish. Each and every fish is deftly filleted before being cooked in a manner that, while time consuming, brings out the inherent flavor of the ingredients to the maximum. ""Buen,"" which literally means ""no salt,"" means ""fresh fish"" in the dialect of Kagoshima. This comes from the fact that salting was once the primary means of preserving fish. The restaurant was named ""Buenkan"" in order to convey that ""the fish served here is so fresh that it needs not be salted."""
