"This Japanese confectionary shop was established in 1900. Based on the original founder's instruction to ""aim to create a better product using high quality ingredients,"" the shop continues to make seasonal Japanese confections. The shop's azuki bean paste, practically the foundation of almost any Japanese confection, is made with only choice, top class azuki beans. The shop's confections incorporate unique, Kumamoto ingredients and are a delight for the eyes as well as the tongue. The shop's popular Ekubo Manju buns are a New Year's confection which are used in the first tea ceremony of the new year. The moist and delicately soft Higo no Rakugan candies are widely loved as one of Kumamoto's most celebrated and well-known confections."

    Kumamoto Kumamoto-shi Chuo-ku Minami-tsuboimachi 6-1
"This Japanese candy shop is located a 10-minute walk from the Torichosuji tram station. The shop continues to make Chosen-ame (Korean candies), a traditional confection in Kumamoto whose history stretches back over 400 years. Chosen-ame are made with glutinous rice, mizuame glucose syrup, and sugar, and are characterized by a lightly sweet flavor and a texture similar to other Japanese hard candies. Long ago, they were called ""chosei-ame"" (long-life candies), but after Kato Kiyomasa, then-lord of Kumamoto Domain, brought them with him during an invasion of Korea and praised them for their delicious flavor as well as their long shelf life, they came to be called ""Korean candies."" While continuing to preserve tradition, the shop also takes on new challenges; for example, in 2018 the shop released lemon candies, its first new product in 115 years."

    Kumamoto Kumamoto-shi Minami-ku Kawashiri 1-3-39-2
Kawashiri is a district filled with old-fashioned buildings bearing white stucco walls and lattice doors. This confectionary shop, located a five-minute walk from Kawashiri Station, has been making delicious and healthy sweets which celebrate the area's distinctive features since it was established during the Tenmei era (1781-1789). The shop's signature product is its Tenmei Manju, a bun stuffed with a flavorful egg yolk filling and sprinkled with fine-grained zarame granulated sugar before baking. The buns have a crumbly texture and are renowned for going well with both tea and coffee. The shop also actively incorporates European confectionary methods; for example, the shop's Cheese Manju, a baked bun with a cookie-like outer crust stuffed with cream cheese, has enjoyed much popularity thanks to this novel combination.
