Sumire (Sapporo Susukino Branch)
This historic ramen shop was founded in 1964. The three basic ramens, miso, shoyu and shio flavors have evolved over time, while preserving the basics of ramen making techniques unaltered since its establishment. The most popular miso ramen is a stock reduced down with pork bones, shellfish, and vegetables. This rich flavored broth is combined with the Hokkaido only thick chewy noodles. Probably born of necessity in this cold climate, this ramen warms the body to the core.
