Choju Sarashina
30 minutes from the Suwa Interchange on the Chuo Expressway. This authentic Nagano soba noodle restaurant makes all of its soba and udon noodles by hand. Diners can enjoy the rich, innate flavor of the buckwheat used in the restaurant's juwari soba noodles, made with exclusively with flour ground from unhulled buckwheat grown at the western foot of Yatsugatake Mountains. The restaurant also serves a la carte dishes like its famous soba inari salty-sweet stewed fried tofu stuffed with handmade soba noodles. For a limited time each year, the restaurant also offers kanzarashi soba, a rare variety of soba which is said to have even been presented to the shogun.
