"Choshi Yamaju is a specialty shop manufactures and sells Hishio, a semi-solid forerunner of soy sauce. A malt made from soybeans and barley is matured to create this fermented condiment, which is sometimes called ""solid soy sauce."" Choshi Yamaju also makes a spicy Chinese condiment, La Jiang Jiang, which has Hishio as a base. In addition to Gensho, the liquid that is produced when fermenting Hishio, the shop also sells soy sauce and miso."
