Catch Copy: The restaurant [Soba-no-hana] is located right near the Kanazawa Castle and Shinmon (God Gate) of Oyama Jinja Shrine, a National Important Cultural Property. You can savor not only hand-ground soba, but also perfectly fresh local fishes and traditional cuisines using the traditional Kaga vegetables. First things to try are the delicacies that are proudly created by the chef, Mr. Imade. Traditional fermented dishes called "Sabanarezushi" and "Kaburazushi" have the mellow aroma with right degree of saltiness of shio-koji (fermented of rice with sea salt and water). They are so addictive and guests would keep drinking local sake, because they go very well together.
