オリジナル出島懐石は、卓袱料理風なので大皿盛りの為、冷めている料理でも納得。固形燃料で焼くモノのみ熱い料理で、他は揚げ物焼き物全てヌルい。
ビックリなのは、吸い物椀に海老すり身しんじょが入っていたのだが、配膳台に椀種だけ入れたお椀が山積みで、そこに衝立の裏のコンロで沸騰させたらしい出し汁を入れて出して来た事。汁はヤケドするほど熱く、椀種の中は冷たい。
