    A 30-minute drive from the Kinomoto Interchange and 40 minutes from the Tsuruga Interchange. This longstanding fish dealer, established in 1784, is situated on the northwest shore of Lake Biwa next to Takashima Municipal Makino Higashi Elementary School. The shop's famous funazushi is made with Nigoro-buna (round crucian carp) from Lake Biwa fermented over a two year period using the same preservative bacteria as when the shop first opened its doors. This lactic acid bacteria produces a robust, tart flavor. In addition to the standard funazushi, the shop also sells a sweetened variety recommended for beginners. Other products the shop offers include tsukudani soy sauce boiled preserved fish, ichiyaboshi fish salted and dried overnight, and ochazuke.

    その臭いで有名な鮒ずしは一度も食べたことがないので、鮒寿しを購入して試食してみました。鮒寿しは二冬漬けて発酵させた本漬けです。ビワイチ途中で包丁のような道具を持ち合わせないので、鮒寿しを食べやすいようにカットしていただきました。食べてみるとちょっと酸味のある発酵食品と言ったところです。心配していた臭いのすごさは余りなく、意外に美味しいです。ワインなどでいただくのがよいかもしれません。

    イサザは琵琶湖固有の淡水魚で、ハゼの仲間です。飴色で半透明の体が、とても綺麗に見えました。郷土料理としては、じゅんじゅん(すき焼き)にして食べるそうです。100g/160円のお値段で、200g買いました。フライにしましたが、ワカサギみたいな味がして、おいしかったです。

Visitors to Shiga prefecture are almost always hopping east across the prefectural border from Kyoto, and they are almost certainly Lake Biwa-bound.
