Tokyo’s 2020 fresh bread boom, 11 shops to check out

The latest mouth-watering food boom to hit Tokyo is high-quality freshly baked bread; this isn’t the firmer bread you’d normally make your BLT sandwiches from, but fluffy, sweet bread known as “shokupan” which is often regarded more like a dessert. The focal points of some of these breads are special ingredients such as butter and cream, whilst others sell themselves based on being made from certain types of domestic wheat. Priced at around 1000 yen each most of these breads don’t come cheaply, but the taste is exceptional and worth every yen spent on them. Why not buy a freshly baked, whole loaf of one of these special breads!

    [Ginza 1-chome /Aoyama] CENTRE The Bakery

    CENTRE The Bakery is a popular bakery that is busy on both weekdays and weekends, and is known as a “Toast Specialty Store”. The bakery specializes in three types of bread: “Square Bread” (840 yen w/ tax included), which is best eaten without toasting due to its soft texture, the appetizing "Pullman" (840 yen w/ tax included), and the baguette-like texture of the crispy "British Bread" (735 yen w/ tax included). As well as taking the bread home, you can also enjoy freshly baked bread at the bakery’s café, which offers both sandwiches and toasts, ideal for brunch or lunch. In particular, the “3 Bread Sampler Set” is a decadent set which allows you to try each of the three special breads exclusive to the bakery.

    A fun element to the café is that you can self-toast your own fresh toast using one of the many different types of funky, retro toasters available in the café. Be sure to get in to the store for the first round of bread which is baked daily at 10am.

    Pelican is a long-established bakery in Asakusa which has been in business for over 75 years, and has long been recognized as a popular bakery specializing in no more, no less than simply bread. The store has many long-time loyal customers, and queues start early from the store’s 8 a.m. opening time and continue until around midday.

    Pelican bread is completely different from the other trendy soft sweet breads. When held, the bread feels heavy and firm, but the actual texture of the dough itself is fine and soft and you will feel an umami sensation with every bite you take. The aroma and saltiness of the wheat is exquisite, and the bread maintains a solid quality like that of more conventional harder breads.

    [Daikanyama] Maison Ichi Daikanyama

    Located just a 2 minute walk from Daikanyama Station, “Maison Ichi Daikanyama” is a bakery that has been selected as one of Japan’s 100 most famous log bread restaurants for the second consecutive year. Here, you can purchase “Purupuru Pullman”, a bread that feels very unique on the palate as it uses the highest grade of blended wheat and fresh cream (4.6 times more cream than the store’s conventional bread). The recommended way to eat this bread is to eat it as it is on the first day, enjoying its natural softness, and then toast it on the second day to experience its delightful crispiness.

    “Nogami” is the pioneer of Japan’s craze for nama shokupan AKA “fresh bread” (i.e. eating bread without toasting). Today, it is a famous chain with more than 100 locations nationwide trading as “Nogami Hanare”. Nogami's discreet fresh bread doesn’t use eggs and uses only the finest 100% Canadian flour. The breads are carefully baked individually by the bakers, successfully creating an end result of bread with a crispness that stays intact.     [Ogikubo] Dondake-Jikochu

    “Dondake-Jikochu” (in English “How Selfish!”) is a high-quality bread bakery created by Takuya Kishimoto. Jikochu means “selfish” in English, and the name of the store carries with it a rather unique tongue-in-cheek catch phrase from the store’s owner, along the lines of "I am so particular about this bread’s ingredients that as long as I’m satisfied it doesn’t matter what anyone else thinks”. This innovative, playful naming sense extends to the names of the store’s breads too, such as "Dondake Jikochu na Kiwami" (Extremely Selfish) and "Dondake Jikochu Ensemble" (Selfish Ensemble).

    “Sakimoto”, in Tokyo’s upmarket residential area Denenchofu, employs highly skilled bakers who carefully craft the store’s “brillant and fragrant” bread. There store has two types of signature products: “Gokubi Natural Bread” and “Gokunama Milk Butter Bread”. Using a unique wheat blend, “Gokunama Milk Butter Bread” has a rich flavor and a melt-in-the-mouth texture, as a result of being baked for more than 22 hours at low temperature. In order to fully enjoy the luxurious flavor, it is recommended to eat the bread as it is without toasting or using any toppings.

    Ore-no(my) Bakery & Café is a bakery specialty store born from the “Ore-no” series of Japanese restaurant chains famous for “Ore-no French” and “Ore-no Italian”. Part of the popular signature “Ore-no Fresh Bread” series, the store’s most desirable menu item is the "Ore-no Incense Fresh Bread". The bread is milky and sweet with a chewy texture, and uses domestic wheat called “Kitano Kaori” and skim milk from “Nakahora Ranch” in Iwate Prefecture. It is a high-quality bread that is most delicious when eaten fresh (i.e. without toasting). Limited to the Ginza store, a loaf of “Ginza Incense Fresh Bread” will cost you 1000 yen, and "Ginza Dream Fresh Bread" goes for 900 yen per loaf. There is also an online reservation system available which can be used only for take-away orders, which is a convenient option allowing you to skip the queues and save waiting time.

    Nishikawa is a specialty bread store that opened in Ginza 1-chome in 2018, and has created a name for itself based on its technique of baking high-quality bread using alkaline ionized water, based on a technique that was developed after years of research by “513 Bakery”, a company that provided bread at the 2016 G7 Ise-Shima Summit. In the world of cooking, it is said that “alkaline ionized water brings out the deliciousness of the ingredients”, and by using its own alkaline ionized water, the final product of Nishikawa’s special Japanese bread is a bread which has a sweet, soft and crisp texture.

    Panya Ashiya is a top-class, specialty bread shop that bakes bread completely free of additives using ingredients from Hyogo’s Ashiya City, and the store has even been featured on TV programs such as “Shuzaikyohinomise”. This special bread is slowly baked at low temperature over a long period of time using an exclusive blend of flour. There are two types of bread available: "Premium" at 810 yen per loaf, and "Select" at 702 yen.
