Kamada Shoyury
A brewery established in 1931. Overlooking the Kuma River in Hitoyoshi, they continue making miso and soy sauce, must-haves for Japanese households. The soy sauce still has the same great flavor today as when they were founded. It's produced in a rich natural environment with the clear water of the Kuma River. Their natural fermenting mash is made by maturing koji bacteria and yeast, the source of the product's savoriness and aroma. Popular varieties of miso include their preservative-free Umakuchi Miso, barley miso made with domestic ingredients, and natto miso made with traditional methods, not to mention their standard miso.
