Mancho
This soba shop is in a town with beautiful scenery all year long. The shop is about a three-minute drive from Yamato Station, and makes their noodles with 50/50 mix of steel ground and stone ground whole grain soba flour. The matching of different ground flour offers a unique texture that makes this shop particularly popular. Their unique broth, made using the hongaeshi method of mixing and maturing soy sauce, mirin, and sugar, and making dashi broth, really brings out the aroma of the noodles. The broth strikes a perfect balance with top grade Rishiri kombu kelp, and thick-shaved two-year-aged bonito.

- 県道沿いの手打ち蕎麦屋さん
- 交差点角に立地していて昼時は並んでるので分かりやすいです。反面目立つので人も多く駐車場満杯でいつも諦めて他へ行くこともしばしば。今回幸いに駐車出来たので利用出来ました。蕎麦は手打ちの十割蕎麦です。山都はこれで統一されてるようですね。喜多方市に属してますが中心街はラーメン、こっちは日本そばと好みで使い分けられますね。店内は町のお蕎麦屋さんって感じでこじんまりしてます。小さ目のテーブル席と座敷席。ご飯...
