This soba shop about a one-minute walk from Gujo-Hachiman Castle Town Plaza makes its noodles by hand. With a motto of freshly ground, freshly made, and freshly cooked, its soba is as fresh as it gets. Even in winter they only serve chilled zaru soba to emphasize the noodle's buckwheat flavor and feeling going down. You can also order a set garnished with karami daikon radish. One of their specialties is The Ultimate Soba Shop Tempura with different tempura fillings wrapped in soba noodles. Their Soba Kaiseki set comes with chilled zaru soba noodles, tempura, and pickled vegetables. It's only available for two groups at lunch and one in the evening.

Love the noodles and the vegetables tempura. Staff were very friendly. They could not speak English, so we have to point at those pictures that are found on tripadvisor.

Best soba ever! I loved getting the fresh wasabi and the noodle water. Also recommend the tempura, light but very good! My daughter loved the noodle wrapped shrimp.
