This trout sushi specialty shop a two-minute walk from Toyama Chihou Railway Kencho-mae or Marunouchi stations is obsessed with creating trout sushi with a rich, fully-bodied flavor. They soak thick-cut trout at the peak of its savoriness in specially-made sweet vinegar to create a refined taste. This is combined with rice grown in Toyama Prefecture, which is pressed slightly stronger than usual to give the sushi a resilient texture. In addition to traditional trout sushi, the shop also offers extra-special trout sushi with even thicker cuts of trout, as well as trout sushi that can substitute for a wedding cake.

富山ではますのすしの販売店は多数ありますが、どこでも一緒ではないんです。地元の人に教えてもらって買って以来、富山に来たときは必ずこの店で買います。鱒の厚みといい、酢飯の味といい、他店とは違う味わいです。

路面電車一日乗車券付きクーポンを使って立ち寄りました。店内で食べていきますかと聞かれたので、お茶まで出してもらえました。鱒の身の厚さ、酢飯の酢の利き具合、他の店よりも一番バランスが良かったです。友人に自信を持って勧められます。
