This long-established soba restaurant is located in Ishibashi Town, Matsue City, Shimane Prefecture and offers authentic Izumo soba made from homemade stone-milled flour. There are two types of soba prepared from early every morning: “hiki-gurumi,” which is made from unprocessed milled buckwheat, and “maru-nuki,” which is made from buckwheat with the shells removed. “Hiki-gurumi” is great for “warigo soba” and “kamaage soba,” which Izumo is famous for, and “maru-nuki” makes for great “kamo (duck) seiro soba” and “zaru soba.” Loyal local customers regularly come here, and it feels just like the old days. There’s raised tatami seating as well for those who want to stretch their legs.
