Soba / Udon

Located in Tokamachi City, Niigata Prefecture, this soba restaurant is famous for the local specialty hegisoba, a type of soba that is beautifully arranged and served in a wooden dish called a “hegi”. Funori seaweed is added to carefully selected, local buckwheat flour ground on a millstone to make this wonderfully tasting and aromatic soba. The noodle broth is packed full of flavor from niboshi (dried infant sardines) making for a rich tasting soup. Lots of customers come here to this restaurant from inside and outside of the prefecture. The restaurant is a relaxing place which overlooks Uonuma Basin.

十日町といえば「へぎ蕎麦」
薬味の「あさつき」をかじりながら食べると凄く美味しかったです。
この食べ方は病みつきになりそうです！

新潟県魚沼地区の名物へぎそばの有名店です。大地の芸術祭を見て回った際に行きました。十日町の国道１１７号線沿いにあります。昼前にもかかわらず大変混雑しており、店の前の駐車場はいっぱいで、第２駐車場に案内されている車も多かったです。店内は結構広くて内装もきれいです。メニューはそばと天ぷらしかありません。せっかくなので連れ合いと二人でへぎそば小（２．５人分）を食べました。つなぎがふのりのせいか、見た目も...
