Nadai Kisoba Yoshiya名代生そば 由屋
Located in Tokamachi City, Niigata Prefecture, this soba restaurant is famous for the local specialty hegisoba, a type of soba that is beautifully arranged and served in a wooden dish called a “hegi”. Funori seaweed is added to carefully selected, local buckwheat flour ground on a millstone to make this wonderfully tasting and aromatic soba. The noodle broth is packed full of flavor from niboshi (dried infant sardines) making for a rich tasting soup. Lots of customers come here to this restaurant from inside and outside of the prefecture. The restaurant is a relaxing place which overlooks Uonuma Basin.
