Nishiuchi Sake Brewery
This sake brewery established in the early Meiji period makes the sake used for sake offerings at Tanzan Shrine. It is notable for its Daimyoshoyazake brand and its kijoshu (sake made by substituting water with sake in some processes). The brewery's amber Ruijoshu received the top marks in the koshu (aged sake) category at the International Wine Challenge 2017, earning it the Koshu Trophy. After being brewed to a Sake Meter Value of at least -50, this sake is aged for 10 years inside a cellar. It has a substantial sweetness unlike that of a kijoshu. The brewery is popular for its broad lineup, which ranges from fresh, unrefined and unfiltered sake as well as fine junmai daiginjo.
