Smokehouse Hayama has been smoking fish over charcoal and cherry wood chips for over 20 years. They use handmade smokers and hand selects only the finest of ingredients for their smoked goods. Every Sunday they can also be found selling their wares in Hayama Farmers Market.

燻製といえばベーコン、ソーセージなど肉類やチーズ、ナッツ等のイメージでしたが、アジの干物だけでなくサバの干物、ホタテ、シシャモ、タコのスモークを扱ってます。簡易な用具を買い揃えても自宅ではなかなかできるものではありません。あっぱれです。

葉山公園前のバス停から徒歩5分ほど、坂を上って、看板に従っていきます。古民家で作っている燻製の匂いが店の前の道に漂っています。アジ、サバの試食ができました。ウズラの燻製は買い占めされたことがあると店主が言っていました。
