Okuto Handmade Soba Noodles Honten Kokubo Store
Soba / Udon
Opened in 1913, this well-established soba noodle restaurant is known as the creator of Kofu chicken motsuni offal stew. It is proud of its hand-made noodles using buckwheat flour from Horokanai in Hokkaido and Fuji water drawn from deep underground that go perfectly with the semi-cooked dipping sauce containing bonito flakes and konbu kelp. The restaurant’s most famous dish, the Kofu chicken motsuni stew. contains chicken offal such as liver, heart and ovaries simmered in sugar and soy sauce for a habit-forming dish with a sweet and spicy rich flavour and an unusual mouth feel with each different type of offal.
