Ichinoya
Records state this history-rich sake brewery was founded in 1865. The brewery's sakes are painstakingly crafted one at a time by the chief brewer with the aim of preserving traditions which have been around since the brewery came into existence. The brewery makes an abundant variety of sakes, including daiginjo, junmai ginjo, nigori, and fresh sake. Of all its products, the brewery's Kinran Kurobe Cho Tokusen Daiginjyo is a gem among gems; sold only in limited quantities, this sake is made with Yamada Nishiki rice, an ideal rice for sake, polished down to 39% and brewed amidst the harsh cold of the Nagano winter.
