Soba / Udon
A soba noodle restaurant located a 20-minute drive from Hitachi-Ota Station on the Suigun Line in Ibaraki Prefecture. The restaurant primarily serves Edomae (old Tokyo-style) soba noodles made by hand using stone milled buckwheat flour and masterful technique. The restaurant even grows its own buckwheat. In addition, the establishment serves dishes made with buckwheat like sobagaki buckwheat dumplings, and a potage made from buckwheat flour and black garlic. Visitors can also taste rural cuisine such as wasabi stalks boiled and eaten with soy sauce and dried bonito shavings, homemade sashimi kon'nyaku devil's tongue jelly, and uruka fermented char paste. The restaurant's drink menu includes select junmai ginjo sakes and Nanbu Bijin junmai cured sake.
