The unique cuisine of Shimane Prefecture is delicious and varied. With traditional streets a common sight in Shimane’s cities, there are plenty of stalls and small shops to pick up delicious snacks to eat on the go which is perfect for a busy day of sightseeing. And when you’re ready for a sit down, make for the local restaurants for simple Shimane gastronomy at its best.

    Most commonly found in its steamed form, manju is a rice bun filled with azuki bean paste. The Shimane special is the fried manju, or yaki manju, which promises a warm and comforting spin on the standard manju. Fugetsudo Manju Confectionary Shop in the Kyomise district of Matsue City is a favourite among locals for picking up a flavour-filled yaki manju. Get to the shop early to avoid disappointment as the yaki manju sell out fast, as well as the castella cakes filled with tsubuan azuki bean paste.

    Imoni is a dish often associated with the Tohoku region of Japan, but restaurants around Shimane also whip up a mean imoni broth eaten primarily in autumn when the temperature starts to cool. The main ingredient is taro, a glutinous potato with a soft flavour, mixed in with the Japanese citrus fruit yuzu and a couple of herbs. This subtle dish works as a palate cleanser and is best sipped between fish dishes such as white squid at Aoki Sushi in Tsuwano.

    A staple food in Izumo, soba noodle shops aren’t hard to come by on a walk around Izumo’s old streets. This local soba dish is uniquely prepared into three lacquer bowls with toppings served separately so you can add as much extra flavour as you wish. If you can’t make it to Izumo, Matsue City’s Kigaru restaurant pays homage to the special soba dish in a traditional, unpretentious establishment a 10-minute walk from Matsue Castle.

    A sushi little known outside of Japan and very much untraditional when compared to the iconic fish-topped sashimi and maki rolls, inari zushi comes served as a triangle of rice wrapped in a layer of sweet fried tofu. While this wholesome snack is common enough to be found in the local 7-Eleven a freshly cooked batch has a taste of its own. After a visit to Taikodani Inari Shrine in Tsuwano, head straight to Mimatsu Shokudo to refuel on this sweet and savoury treat.

    Genji maki is an otherworldly dessert created from a fusion of the best of French and Japanese sweets. Sweet crepes are embellished with a generous filling of red bean paste then rolled up and sliced into mouth-size bites once done. This delicious snack can be picked up in Tsuwano from Yamamoto Fumido, a charming, traditional Japanese sweet shop in the Kanoashi District.
