Many onsen towns in Japan serve a delicacy known as onsen tamago (onsen egg), which is essentially a regular egg that has been slow-boiled in the waters of a hot spring. The egg is placed in a net bag, lowered into a simmering vat of hot spring water and left to slowly cook over a period of about thirty minutes. The cooked egg has an unusual and unique texture, with the egg white resembling a creamy, soft custard while the yolk is firm, and often served with a small bowl of soy sauce. In Kinosaki Onsen, you will find onsen egg being served at the foot of the Kinosaki Ropeway in a small store called Chaya. No trip to Kinosaki is complete with a trip to Chaya!
