Fu is dried gluten made into a bread-like texture, and it’s a specialty of Kanazawa. Since 1865, Saryo Fumoroya has been making fu dishes, and they put their 150 years of expertise to good use. Expect an upscale atmosphere with black and white decor, but the dishes aren’t only traditional. The restaurant offers modern fu creations that stay true to heritage, and the diverse spread of their set menu is worth a few pictures.
