LA SOEUR|Canelé Served Chilled for a Tasty New Texture

Hakata-based LA SOEUR, which opened its Tokyo shop in August 2020, specializes in canelés, a delectable French pastry. The shop's fresh canelés, eaten chilled, are especially popular. The vanilla canelé is filled with a generous serving of custard cream and topped with a hefty dollop of cream, giving it an unexpected appearance and a delightfully different texture—crispy on the outside and chewy on the inside.

Canelés come in a range of flavors, including chocolate, blueberry, orange, fruit and Earl Grey. The shop also features limited-edition seasonal flavors, so be sure to check to see if any are available when you visit.

You won't find these delectable canelés sold on any of the major online shopping sites, and in the Kanto area, you'll find them only in Shinjuku, so don't miss your chance to pick some up when in the neighborhood. Frozen canelés can be purchased to take home.

    Jiichiro|Rich, Luscious Pudding

Jiichiro, based in Hamamatsu, Shizuoka Prefecture, is famous for its baumkuchen. It took the shop’s artisans 100 tries before they were happy with their version of the German layer cake. It shows: The shop's baumkuchen, made from 24 thin layers of batter, are baked slowly and carefully, and are so silky and moist that they can be enjoyed sans beverage. The cakes are available in two sizes, one with a height of approximately 8 centimeters and the other with a height of approximately 4 centimeters.

In addition to baumkuchen, Jiichiro is also known for its delicious pudding. The pudding is made with copious amounts of egg yolk—no whites—mixed in with plenty of cream. Baking is slow and at a low temperature, which gives the pudding a rich, milky taste.

The simple yet elegant package design evokes a Japanese ambience, making the pudding a good choice for summer's traditional gift-giving occasions.
