Yuki Shirai, the owner of Ain Soph is like a “food sorcerer” who could magically design any ingredients into vegan friendly food. With her passion to broaden more food options using what’s available in Japan, it took many months and years of hardship to make what everyone awaited,vegan burger.

“We started out with brown rice and vegetables, but we always had a craving for fast foods. Unlike meat, without adding any additives, patties made of mushrooms, veggies and konyak fall apart. That’s where we had difficulty in trying to find alternatives.” explains Yuki.

After getting feedbacks from the customers, Yuki added mac & cheese on the menu and surprisingly this had a high demands and popularity among foreigners.

In comparison, Ain Soph Journey and Ain Soph Ginza has different menus. The first branch, Ain Soph Ginza offers delicate piece of vegan dishes in a more “Japanese” style bento box with many flavors and textures. While the second branch, Ain Soph Journey in Shinjuku offers variety of dishes and is also the birthplace of the famous 'Heavenly Vegan Pancakes.'
