    2. Fujiya Noodle Sapporo "ふじ屋 NOODLE"

    If you’re after a Michelin experience, head to Fujiya Noodle, which made an appearance in the "Michelin Guide Hokkaido 2017 Special Edition” and reflects the exciting evolution of ramen in Sapporo.

    It offers two different types of ramen - one that features a thick miso-flavored broth based on pork bones and a light soy sauce while the other is made using dried sardines, seafood and kelp that are unique to Hokkaido.     Located on Sapporo’s popular Tanukikoji Shopping Street, Ittetsu is a ramen store by day before transforming into a traditional izakaya at night.     Just eight minutes on foot from Nishi-Jūitchōme Station is this bustling ramen store where you’ll likely find a queue at noon. It’s famed for its Miso, which looks rich at first glance but is surprising-ly light and with a refreshing ginger aftertaste.

    This combines perfectly with the tender char siu (barbecued pork) and soft-boiled eggs to create a dish that hints at the Western training of Ramen Senju’s owner.

    If you want to eat local and healthy, then head to Ramen Sapporo Ichiryu-an, which is just three minutes on foot from the south exit of JR Sapporo Station.

    They are proud of their commitment to using only the best quality wheat grain (the main ingredient of noodles) and use a combination of garlic and sesame with ground pork from Hokkaido.     This super-famous ramen restaurant was first established in 1964 and now has three stores in the city.

    Their chicken and sea-food soups are light and mellow, with the homemade noodles a perfect accompaniment. As you eat, the flavor of the pork diffuses through the soup and transforms its taste, with saba (mackerel) garlic powder on the counter so you can add it to your liking.

    Located on the 10th floor of the ESTA complex, this cluster of eight ramen restaurants offers a taste of what Hokkaido has to offer.

    Kyowakoku translates as “Republic”, which is exactly what this is, with ramen as the president!
