Tokyo’s 2020 fresh bread boom, 11 shops to check out

The latest mouth-watering food boom to hit Tokyo is high-quality freshly baked bread; this isn’t the firmer bread you’d normally make your BLT sandwiches from, but fluffy, sweet bread known as “shokupan” which is often regarded more like a dessert. The focal points of some of these breads are special ingredients such as butter and cream, whilst others sell themselves based on being made from certain types of domestic wheat. Priced at around 1000 yen each most of these breads don’t come cheaply, but the taste is exceptional and worth every yen spent on them. Why not buy a freshly baked, whole loaf of one of these special breads!

    [Ginza 1-chome /Aoyama] CENTRE The Bakery

    CENTRE The Bakery is a popular bakery that is busy on both weekdays and weekends, and is known as a “Toast Specialty Store”. The bakery specializes in three types of bread: “Square Bread” (840 yen w/ tax included), which is best eaten without toasting due to its soft texture, the appetizing "Pullman" (840 yen w/ tax included), and the baguette-like texture of the crispy "British Bread" (735 yen w/ tax included). As well as taking the bread home, you can also enjoy freshly baked bread at the bakery’s café, which offers both sandwiches and toasts, ideal for brunch or lunch. In particular, the “3 Bread Sampler Set” is a decadent set which allows you to try each of the three special breads exclusive to the bakery.

    A fun element to the café is that you can self-toast your own fresh toast using one of the many different types of funky, retro toasters available in the café. Be sure to get in to the store for the first round of bread which is baked daily at 10am.

    Pelican is a long-established bakery in Asakusa which has been in business for over 75 years, and has long been recognized as a popular bakery specializing in no more, no less than simply bread. The store has many long-time loyal customers, and queues start early from the store’s 8 a.m. opening time and continue until around midday.

    Pelican bread is completely different from the other trendy soft sweet breads. When held, the bread feels heavy and firm, but the actual texture of the dough itself is fine and soft and you will feel an umami sensation with every bite you take. The aroma and saltiness of the wheat is exquisite, and the bread maintains a solid quality like that of more conventional harder breads.

    [Ogikubo] Dondake-Jikochu

    “Dondake-Jikochu” (in English “How Selfish!”) is a high-quality bread bakery created by Takuya Kishimoto. Jikochu means “selfish” in English, and the name of the store carries with it a rather unique tongue-in-cheek catch phrase from the store’s owner, along the lines of "I am so particular about this bread’s ingredients that as long as I’m satisfied it doesn’t matter what anyone else thinks”. This innovative, playful naming sense extends to the names of the store’s breads too, such as "Dondake Jikochu na Kiwami" (Extremely Selfish) and "Dondake Jikochu Ensemble" (Selfish Ensemble).

There store has two types of signature products: “Gokubi Natural Bread” and “Gokunama Milk Butter Bread”.
