    A sake brewery you can spot by its large smokestack with Chinese characters written on it. Since its founding in 1743, they have been making full flavored sake with ultra-soft water; considered among the Top 100 Famous Water in Shimane Prefecture, the water is used in the Fumairyu school tea ceremony, which originated in Matsue. Their premium Gassan Junmai Ginjo has won consecutive awards for flavor in the Hiroshima Regional Taxation Bureau Chugoku Sake Awards. The clean taste is popular with those unfamiliar with sake and customers from overseas. Their popular Special Junmai Izumo won the highest prize in the Fine Sake Awards Japan.

What Shimane prefecture lacks in size and population, it makes up for in scenery and ancient mythology.
