- A soba restaurant at Roadside Station Seiryu no Sato Shirotori located a five-minute drive from Mino Shiratori Station. They offer freshly made soba noodles from locally produced buckwheat flour. The pleasing aroma of the noodles goes great with the broth made with pure local water. They also offer a variety of side dishes like hoba-sushi, a Gifu seasonal tradition with vinegared rice wrapped in a magnolia leaf. Other items include mountain vegetable tempura and sobagaki buckwheat dumplings. They also hold soba making workshops (reservations required).

おそばを頂きました。 梅肉おろしそば、梅肉は肉団子ぐらいたっぷりあって、暑い夏場に最適。塩分が補充されました。 まだまだ暑い日が続きますが、塩分補給は重要です。 ところでこのお店、テーブルはすべて一枚板なんです。林業が盛んなんですね。

- A soba noodle shop near the Sogi-sui Spring (also known as Hakuun-sui), which was certified among the best of Japan's Top 100 Famous Water by the Ministry of the Environment. They use this great Gujo water along with carefully selected domestic soba flour to make their noodles. Their most popular meal is their chilled zaru soba noodle and Hida beef rice bowl set, featuring buckwheat noodles with a pleasant texture and aroma and a small Hida beef bowl prepared with soba broth. Offering a little taste of luxury in a casual atmosphere, their Hida beef bowls are often sold out due to limited quantities. Abandoning the air of exclusiveness that some soba shops have, their Chomolungma zaru soba featuring an extra-large serving of noodles is popular with young people challenging themselves to eat it all.

- This soba shop about a one-minute walk from Gujo-Hachiman Castle Town Plaza makes its noodles by hand. With a motto of freshly ground, freshly made, and freshly cooked, its soba is as fresh as it gets. Even in winter they only serve chilled zaru soba to emphasize the noodle's buckwheat flavor and feeling going down. You can also order a set garnished with karami daikon radish. One of their specialties is The Ultimate Soba Shop Tempura with different tempura fillings wrapped in soba noodles. Their Soba Kaiseki set comes with chilled zaru soba noodles, tempura, and pickled vegetables. It's only available for two groups at lunch and one in the evening.

表の通りに背を向けたちょっとへそ曲がりなお店。屋号も「深萱ふーど」お昼にいただきました。セットメニューで、まずはそばのカリントウ、蕎麦の実の入ったおから。もりそば、冷たいたぬき蕎麦、蕎麦粥。どれもしっかりした歯ごたえ、喉越し。にしん蕎麦やとろろそばなど単品も楽しめます。お店の周りは蕎麦畑。楽しいひと時でした。

こじんまりしたお店で、日曜日は必ず待ちの人がいます。今回は初めて平日に訪問し、万を辞して11:30の開店と同時に伺いました。決して派手なお店でも格式が高いわけでもないけれど、季節のお花が飾られ ごぼ天の乗った蕎麦は最高でした。
