    "The name of this smokehouse means something like ""How can this be so delicious?"" They make and sell dry sausages, ham, pork patties, and bacon made from Kagoshima Kurobuta pork produced by a veteran farm. The workshop is modeled after an old building in Franche-Comte's Jura area and the large smoke house has a flue at the center for use in smoking their meats. Their premium dried white cured sausage has a deep, distinctive flavor that many customers find addictive."

    お店に入るとまず最初に何種類かの燻製などをお茶付で試食させてくれます。天井にぶら下がっている白カビの熟成ソーセージが一番人気のよう。お値段はそこそこ張りますが、折角高山まで行ったなら寄ってみたいお店です。当日持ち帰るのなら大丈夫と思いますが、一泊の翌日帰りだった自分は日付指定で冷蔵便で宅配してもらいました。白カビの熟成ソーセージ、最高に美味しかったです。

    This porcelain shop is a little to the east of Kajibashi Bridge. Founded in 1841 and run by Houkokusha, to this day they continue to make hand painted Shibukusa-yaki chinaware. This is the only place Houkokusha’s products are available. Since everything is meticulously hand painted, their pieces aren’t cheap, but they’re high quality. People often give them as gifts, and Japanese people sometimes choose them as a reward for participating in the “countryside tax system. Their hallmark product is a tea bowl painted with chrysanthemums inside and out. If you hold it up to the light you can see how beautifully the patterns are rendered.

    This old school brewery established in 1885 is half way along Sanmachi-dori Street, northwest of Takayama Castle. Their hallmark brand of sake is known as “Dashi. It’s made with techniques from the Edo period (1603-1867) and a Hida area brewing method known as gento kanjikomi. They also have their own sake brands like the refined Hanakobo with extracts of abelia and begonia that you can taste in their warehouse. The shop offers desserts made with local sake like cheesecake and soft serve ice cream too, and women also really enjoy their products.
