    Gifu Takayama-shi Honmachi 3-1
    This dumpling shop is located a ten-minute walk from Takayama Station at the foot of Kajiyabashi Bridge. It sells salty mitarashi dumplings (rice dough dumplings with sweet-salty sauce) that are fragrantly made with an original soy sauce-based sauce instead of the usual sweet dumplings. Their sauce has a traditional flavor that has been used since its establishment. It is a special sauce made by blending three types of soy sauce. The shop also sells Hida's local dish of gohei-mochi rice cakes (grilled rice cakes skewered and basted in sweet walnut miso) that are also not sweet, so you can experience the slight sweetness of the glutinous rice.

    高山の定番、鍛冶橋のたもとで頂いたみたらしだんご90円。世間でいう甘辛のタレで頂くそれではなくお醤油のタレをつけてこんがり焼き上げるタイプ。これが高山流みたらしだそうです。こまお店、何度訪れたか分かりません。 見慣れた鍛冶橋店のおばちゃん、相変わらず頑張ってるようですが…この日のおばちゃん、無愛想&不機嫌でした。

The half-baked confectionery called ""Hida no Kataribe"" made using kinako (soy bean flour) and kosen (roasted barley flour) is the shop's signature item. It is a wonderful treat that comes in a refined box and has the aesthetic sentiment of Hida Takayama, and has won the Japan Confectionery Award at the All Japan Sweets Exhibition."

    "This long-established Japanese confectionery shop was started in 1798. Ogaki is called the ""City of Water,"" and the popular confection ""Kinchoen Manju"" is the result of trying to create a sweet that suited the water of Ogaki with modified research. The sweet bean paste using plenty of good quality groundwater has a clean taste without any harshness. It is their prided product wrapped in yeast for making sake that they have made for over 150 years. Tesshin Ohara, who was once the feudal lord of the Mino-Ogaki domain, was very impressed when given them, and it is said the name of the confection was chosen in a song to praise it."

Visitors can also enjoy the carefully prepared ""Hida Beef Buns,"" which bring out the juicy savory flavor of Hida beef with miso accents. Gassho (large thatched roof) style straps made of beads are also popular souvenirs."

    こちらはテイクアウトのお店です。牛串もありますが、甘酒も珈琲も250円とコスパ最高です。白川郷に甘酒は合いますよね。ここで甘酒を買って飲み歩きして、雪景色の中、体が温まりました。

    This bakery is located a two-minute walk from Minosakamoto Station. It makes bread using homemade natural yeast in a small log cabin. The bread using Hoshino natural yeast is a popular item packed with the uniqueness of the store. It is recommended to eat it simply while enjoying the fragrant scent. The stone kiln that bakes bread as well as wheat, chestnuts, red beans and yeast was also built by the store. There are many products that you cannot find anywhere else such as panettone with yogurt yeast or bread with strawberry yeast.

    テレビで紹介され、気になったので行ってみました。中央線の美乃坂本駅の近くなので、電車でのアクセスもいいです。 パンはそれほど種類は多くないのですが、何しろ酵母はもちろんブドウなどのフルーツや野菜も自家製のものを使ってるそうで、こだわりが感じられ、美味しく頂きました。イートインはないのでお持ち帰りになります。

They continue to make ""Kurikinton,"" a traditional confectionery from Nakatsugawa that uses only sugar and no preservatives or flavoring. Shichifuku's ""Nakatsugawa Sweet Chestnut Paste"" boasts chestnut grains of impressive quality. There are three to four fresh chestnuts used for one serving of Sweet Chestnut Paste, and it has a distinct prominent taste that comes from the condensed deliciousness of the chestnuts. They are sold for a limited time from September to around February of the following year. The ""Butter Dorayaki"" which uses coarse red bean paste from Hokkaido Tokachi red beans and slightly salty whipped buttercream is also popular."

    Love the water chest but dessert. One of the best! Tried the puff and most popular crystal dessert. You wont be disappointed. Staff very friendly and warm.

It is a lucky charm in the form of the Kiso horse and made with straw, that's famed for its simple loveliness.     The Train Bleu bakery, which attaches great importance to ensuring that ordinary bread is made as delicious as possible every day, is very popular with local residents. On weekends and public holidays, Train Bleu can get so crowded that it has to issue numbered tickets to customers. Besides basic, everyday breads, Train Bleu also sells first-class Viennoiserie (pastries); one especially popular product features seasonal fruit with cream on a delicate croissant base. The bakery closes when it is sold out for the day, so it’s best to get there early. Train Bleu is located around 20-minute drive from the Takayama Interchange of the Chubu Jukan Expressway.

    SO GOOD! We waited outside for 15 minutes to get in but worth the wait! So flaky and delicious. Everything is about 300 yen or more. Make sure to get the strawberry tart with fresh cream!

    This Japanese confectionery is a nine-minute walk from JR Takayama Station. Their popular Neko Manju are delicious and fun to look at. They offer five varieties modeled on the alley cats that gather in the lane behind the shop: tiger, Russian blue, black, white, and tortoise-shell patterned. The dough and bean paste vary with the cat, so it's fun to try them and compare. They also have what's said to be the ultimate Takayama autumn confection, kuri yose, made with chestnuts. Naturally sweet, they don't get heavy however many you eat. If you like sweets, you may find yourself eating the whole thing before you know it.

    This rice cracker shop is located in the Sanmachi Preservation Districts for Groups of Traditional Buildings. With a dedication to fine ingredients, they select domestic rice every year, and have special rice cracker soy sauce made for them by a long-standing soy sauce maker. They toast the rice crackers over binchotan charcoal, and you can eat them as is fresh from the shop. They even have a huge face-sized rice cracker. Since it comes with a piece of nori seaweed to hold it with, your hands stay clean, and it’s perfect for eating while walking around. They also sell a variety of other items like nurekari mochi and hoba senbei, so you can pick your favorite depending on the thickness and flavor. They’re also recommended for souvenirs.

    高山の街を歩いていると醤油のいい香りが伝わってくるせんべい屋が多い。 ホテルの売店にもいろいろと置いている。 ここのせんべいは原料は銘柄米、醤油も特注品だそうだ。 大きいせんべいが200円近い。 高いけれども、うまいのに納得。
